Look Out World

Well, I think I can finally breathe.  I’ve got my bag pretty damn near packed, my Euros and Passport ready to rock, and I checked in for all of my flights this morning.  Look out Greece, we’re coming!!!!

Yesterday I broke down and ordered up Pumpkin Spice for breakfast.  I was thinking I would wait until I got back from vacation because I didn’t want Summer to end too soon, but the grey sky that showed up here yesterday convinced me to get into the pumpkin mood.

For lunch I was really just cleaning out the fridge.  Let’s see, the produce drawers had a wimpy bunch of green onions, a couple of random radishes, and like two leaves of lettuce screaming to be used.

Thankfully I also had half a carton of eggs and the remnants of a loaf of bread.  Egg salad to the rescue!

Blueberries, granola and soy milk for dinner.  A girl’s gotta do what a girl’s gotta do.

I cashed in a Groupon I bought for Om Nailspa months ago to get a mani-pedi before hitting the air.  Figured I might as well get Summery bright toes one last time for the season, and something dark and sharp on my fingers (don’t worry I bought the polish for touch ups).

After a whirlwind trip through my apartment doing a final vacuum, laying out my final clothing choices, and collecting up all of my camera bits and pieces for packing I was off to Michael’s to share up that Peach & Blueberry Cobbler.

Now I’m just finishing up loose ends for work, packing the dog up for her adventure to the other Jamie’s, and dealing with this pile of lovely.

Excuse me sir, there’s a tiger in my coffee.

Oh lordy people, it’s been a long day.  I’m afraid I am overtired and slightly goofy. Also lacking in the nutrient department.

You see…tomorrow is the first big day of my adventureThe moving truck is coming!!  Of course, as exciting as that is it also means that I was busting my ass trying to get every last thing packed today!

Thank goodness Cosette offered to come help tie up any loose ends. And to bring me a latte.

Even though I said no to Starbucks (yes, it does happen!) I was so grateful to her for not listening to me.  :)  Tall, non-fat vanilla latte.  She knows me well.

Breakfast consisted of a broken granola bar I shoved in my mouth while dismantling my computer for packing.

After a few boxes were sealed, we headed off to meet Sarah for lunch.  I wanted a final meal at The Armview and now seemed like the time!

I didn’t even need to look at the menu.  BLT on whole wheat with fries and a side of garlic mayo.  They make one of the best BLTs I’ve ever had.  Better than homemade!

With ice tea.  Seemed like a packing day kind of meal.

After that we came back and powered through a few more things before Cosette had to head off to retrieve her daughter from school.  I took a break from packing and actually had to work.  Good thing my job is flexible and nothing major happened today, so I was able to spend most of the evening getting through my outstanding projects and prepping things for my co-workers to cover while I’m off for the next two weeks.  I’m certain I forgot something, but I’m also certain the world will not end.  :)

While I worked I snacked on these AMAZING farm fresh strawberries I picked up from a road side stand on our way back from lunch.  So stoked that I was able to get some before leaving Nova Scotia

Not sure if these were Farm Girl berries but they were sooooo freaking deeeeelish!!!

Dinner was just a frozen Smart Ones meal.  Ravioli something-or-other.  The sauce is OK, but the pasta filling tastes like paste.

I feel kind of dirty for eating that.  LOL.

I worked until 9:30, then spent an hour walking around grabbing the last few things and filling up any open boxes.  People, I think this is it.  I think I got it all.  GULP.  It’s official.  I’m moving!!!

To celebrate I broke out my lowly spoon again to enjoy some Root Beer Float ice cream

Spoooooon!

The other night I got on a roll in the kitchen and packed up pretty much everything but the kitchen sink (and the coffee maker!).  Thankfully Arron will still be living here so his kitchen wares are still available for cooking and eating purposes.

Um, except the cutlery is mine and I packed it.  Whoops.

But I still had one lonely spoon kicking around...

So yesterday all foods had to be spoon-edible (or require no utensils!).

It is about to become very apparent that I am also working my way through whatever food I have on hand!

At lunch time I broke down and busted into the box of camping gear to find an extra fork so I could eat a salad!

Mixed greens, carrots, celery, radishes, red pepper and light feta cheese in Spring Herb dressing with fresh basil...

Tonight I'm attending one last yoga class at Breathing Space and finishing up packing my bedroom closet.  Dinner will be a freezer meal and I'm OK with that.  I'm exhausted.

Return of Mayo

After my Tuesday night beers, I woke up needing vitamins and hydration.  Before even hitting the coffee pot, I hit the blender.  (I know, I'm shocked too!)

Green smoothie time!

In the KA today:  ice, 1/2 frozen banana, 2 handfuls baby spinach, 1/2 scoop chocolate whey protein powder, 1 tsp maca powder, 2 tsp flax meal, 3/4 cup UCAB...

Combined with water and coffee that kept me going most of the morning.  I nibbled on a few cherries when I wandered through the kitchen at some point too.

Condo news:  Tiffaney subbed in for me (yet again!) for the inspection and it went AWESOME!!  She and my realtor both got a laugh because the inspector was seriously struggling to come up with ANYTHING bad to say!!  How great is that?  The unit and the building are both very well maintained and totally exceeded expectation.  Woooooo!  :)

Come lunch time I was totally looking forward to using up some leftover chicken I had cooked up while making dinner the night before.  For some reason I've been craving chicken salad!  I even bought a little jar of light mayo when I grocery shopped last week in anticipation of this meal coming together. 

In the bowl:  chopped cooked boneless skinless chicken breast, celery, green onion, Sultana raisins, salt & pepper...

Mixed with mayo and served open face on a toasted sandwich thin...and sprinkled with a smidge of dill...

Sometimes I put grapes IN my chicken salad...this time I served them alongside...with a few light cheddar cubes...

My afternoon went part way to h3ll in a hand basket.  My bank decided they wanted something fixed on my condo paperwork...which is a gigantic pain in the behind because I have to receive everything by email and then print it out and take it to Staples to fax back.  I have now spent so much on faxing, I could have purchased a scanner...argh.  Hopefully that's the last of it...*cross your fingers*.

Because of all that hoopla and the 4 hour time difference, I ended up missing yoga.  It was supposed to be my last class, so I'm going to try my damndest to get there next Wednesday night instead.

Instead I made a late dinner (more freezer finds!) and finally got a good start on some packing.

Perogies!  Fried up in a tiny knob of real butter with onions and garlic...

Served with steamed broccoli and light sour cream for dipping.

Carby perogies made a good substitute for wanting stress foods like Cheeeetos.  :)  It was a good thing I didn't have any of those glowing orange munchies on hand...they wouldn't have stood a chance.

I did however have some yummy new ice cream in the freezer.  I have still been toting a craving for Coldstone around this last week, but in an effort to save a few bucks and not get into fast food/take out just yet (the road trip is going to be chock full of it!) I opted to try one of SuperStore's new ice cream shop flavours...Root Beer Float!

Super creamy!  Vanilla and root beer flavoured ice creams swirled together.  The flavour was perfect!  I did not like the crunchy candy bits in there though...crushed up pop flavoured Life Saver type things...I could have done without those.  But it did hit the spot while I packed up 4 boxes of kitchen ware. :)

Twas a long day and I actually slept like the dead.  Here's hoping today is a little lighter. zzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzz.
