Yesterday

…seeeeeeems so faaaaar awaaaaay!

Oh geeze, apparently I’ve been sitting at a computer just a bit too much.

Instead of rambling I will just let you enjoy this collage of what I ate yesterday.  I know you were all just dying to know!

That blank space should hold my water bottle.

1. Overnight oats with fresh blueberries.

2. Coffee with almond milk.

3. Salad for work with cheese and almonds.

4. Second lunch: multigrain sandwich thin with sunflower butter and banana.

5. Iced coffee with almond milk.

6. Dried cherries.

7. Tostada repeat.  Leftovers were just as deeelish as the originals.

8. Homemade cherry pie!

Dog Day Weekend

Our weekend was relaxing yet crazy busy at the same time.  Saturday I spent a good portion of the day putting the final coat of white paint on all of the door and window trim in the basement suite, while Michael spent his day preparing his deck for painting.

We took a much deserved pit stop at Qoola and then curled up on the couch to watch our ‘stories’ after dinner.  The Newsroom and Breaking Bad.

1. Coffeeeeeee.

2. Scrambled eggs with swiss chard, grilled ham, whole grain toast.

3. Watermelon with basil.

4. Cheese and salami.

5. Qoola Frozen Yogurt:  half chocolate topped with M&Ms and Crispy Crunch, half coconut with berries, mango and coconut, sour dinosaur garnish.

6. Grilled pork loin chop, boiled new potatoes with chives, salad.

7. Vanilla ice cream with peaches.

On Sunday morning we took our time walking the dogs and sipping our coffee before launching into our day.  Michael tackled painting his deck while I opted to do some baking, some gardening, some errands, and some reading.

1. Whole grain toast with PB and banana.

2. Coffeeeeee.

3. Breakfast cookie.

4. Chinese leftovers found in M’s fridge. :)

5. Chilled chicken breast, ah-mazing corn on the cob, man salad.

6. Homemade cherry pie! with vanilla ice cream.

I’m so proud!  This pie crust turned out exactly how I love it.

This batch of panzanella ‘man salad’ was made with toasted ciabatta, fresh tomatoes, basil, Italian parsley, finely grated Irish cheddar, EVOO, balsamic, and salt & pepper.  I could eat this all.day.long.

Sunday night we watched Batman Begins in anticipation of heading to see The Dark Knight Rises next weekend in between our next batch of renovations and chores. 

Sadly I can no longer stay over on Sunday nights with my new work schedule, but I looked at it as a nice start to my new week…coming home, prepping my lunch and outfit for Monday!

Blueberry-Yogurt Freezer Pie

Yet another Pinterest find.  A pie that ANYONE can make!  No baking required.  If you can stir and you have room in your freezer, you can make this!  Four ingredients really can’t lead you astray.

The mistake I made was stirring the blueberries into the yogurt instead of spreading them on top.  Ah well!  Still tasted the same I’m sure!

I followed the ingredients for this pie as written for this first attempt, but I already have visions of switching out the vanilla yogurt for lemon or pineapple.  And switching up the berries for strawberries or blackberries.  Can’t you just taste it?!

I found this version a wee bit too tart…freezing yogurt isn’t the same as frozen yogurt.  You definitely know you are eating yogurt.  Next time I’ll add a wee bit of something sweet…honey or the like.  Or use a sweeter yogurt.

Aside from that though, this is a recipe worth keeping on hand for a easy and delicious warm weather dessert.

Double the Fun

Well, I’m officially working two jobs!  Super exciting, but let me tell you I’m so glad I’m working part time at the new job to start.  Trying to wrap my head around everything I need to do to make this work is going to take a couple of weeks for sure.  At least I managed to eat breakfast and pack a lunch yesterday!

1. First coffee and water at home.  (Packed 2nds of each to take to the office.)

2. Overnight oats with fresh blueberries and strawberries.

3. Lunch to go: salad with chickpeas.

4. Second lunch:  tuna-cado and rice crackers.

5. Dried cherries.

6. Banana, sunflower butter protein shake.

7. Apple and cheddar.

8. Dinner at My Chosen Cafe:  BLT on whole wheat with yam fries.

That BLT was damn delicious and such a reward after a crazy week!

Tostadas on the Fly

You probably shouldn’t look at today’s collage. If you do you will notice that I didn’t eat breakfast. Because even though I got up an hour early, my new morning routine seriously needs some work. One second I was sipping my coffee, walking the dog, then combing my hair. The next second I had 1 minute to get out the door.

Riiiight. That’s what it like to have a normal job outside the home. Good thing it was only an orientation day and I was home for a late lunch.

Don’t worry, breakfast and lunch are all prepped and sitting in the fridge for tomorrow. Maybe I’ll have time for my two cups of coffee before I head off for the day!

1. Coffee with almond milk and water.  I at least managed to throw my water bottle in my purse.

2. Kind bar.  Breakfast of idiots that can’t plan their time properly.

3. Bigass salad with tuna-cado.  Is there anything avocado can’t do?!

4. Protein shake.

5. Cherries.

6. Tostadas! 

7. Miracle Day Blizzard.  Half Smarties/Half Cookie Dough.  And after punching that bad boy into MyFitnessPal I now know that will be the only Blizzard I have all Summer.

Tostadas on the fly:  Layer toasted corn tortillas with warmed refried beans, sprinkle of cheddar cheese, drizzle of plain yogurt and salsa, red onion, shredded lettuce, diced tomatoes and chopped cilantro.  Sprinkle with salt and fresh squeezed lime.  Enjoy!

Star Pops and other fun

Another busy day (who knew finding cute flats was so hard!) and another opportunity to eat on the fly and forget to beef up the protein.  Ha, I kill myself.  Beef.  Protein.  I’m funny.

WIAT_July25

1. Kashi Honey Almond Flax with Liberte Greek Vanilla Yogurt and fresh blueberries.

2. Water (x 3 all day) and coffee with almond milk.

3. Celery, rice crackers, Laughing Cow, and hummus.

4. Big leafy salad with tomatoes, cukes, red pepper, avocado and cheddar.  Where’s the beeeeef?  I meant to use tuna. 

5. 1/2 leftover Larabar I had in my purse.

6. Starbucks tall non-fat half sweet vanilla iced coffee.

7. Leftover Thai Green Curry with tofu over brown rice.

8. Pinteresting Pina Colada Popsicle!

What’s harder to find than cute brown flats?  A freaking popsicle mold!  I pinned this Pina Colada Popsicle recipe ages ago but it’s taken me a couple of months to find a popsicle mold.  Every time I checked the obvious places they were sold out.  Thankfully a second trip to a popular local store, Capital Iron, provided me with these cute star shaped molds.

What I Ate Today

1. Overnight oats with blueberries and sunflower butter.

2. Water x 3.5 all day.

3. Coffeeeeee with almond milk.

4. Cherries.

5. Cheesy scrambled eggs and salad with avocado.

6. Protein shake (with a side of peeping Chibi!).

7. Leftover “cheetahs” with hummus.

8. Thai Green Curry with tofu, peppers, and Chinese eggplant.

9. Fresh strawberries.

10. York peppermint patty.
