Formspring Friday

I mentioned a couple of times last week that I had decided to join the formspring along with a bunch of other bloggers.  I was skeptical that it would be fun, but I now admit I’m totally addicted.  :)  Go check out my page and ask me something…I won’t say anything because obviously some stuff is off limits, but have at it!

It’s a good distraction between work tasks!  As is lunch…

Just leftovers…it’s seriously mother hubbard’s cupboard around here…

This was the roasted veggie/navy bean concoction from earlier this week…with a scoop of hummus just for fun.

Early afternoon I got hungry again.  This is what happens when I don’t have oats for breakfast.  Smoothies are delicious and nutritious but they don’t have sticking power.

I was hunting for chips, but ate this bosc pear instead.

And drank a lot of water, which only made me hungrier.  Yes, water makes me hungry!  It’s that quasi-ulcer type situation I have…water works in reverse on me.

So I ate the last serving of Eggies…

IMG_2765

Good.  Now they are gone!

Worked a bit late but nothing too major. My aching back can’t take sitting there that long.  I ended up not making it to the gym due to weather, work and back pain…but I wanted to do something so I popped in the Booty Camp Fit DVD and did the Booty Booster.  Love that 14 minutes of pain!

I wanted to do abs too, but my back wasn’t having any part of it.  I am sooooooo over this injury.  Make it stop.  Pleeeeeeease.

When I opened the fridge I realized dinner was going to be a challenge.  The shelves are pretty much bare.  I guess my plan not to buy groceries this week worked!  I did spy some broccoli so I pulled some chicken from the freezer and a box from the cupboard and make quick work of a tasty meal.

Chicken, broccoli and risotto.  Deeeeelish.

Cheater risotto…

IMG_2771

Chicken breast marinated with EVOO, balsamic, garlic, Italian Seasoning and s&p…grilled on the Griddler.

IMG_2777

All this fanciness cooked up and eaten while FH waited for a pizza.  Silly boy missed out!!

I saved half the chicken for tomorrow.  And had a glass of milk because I’ve been slacking on the dairy this week…

IMG_2778

So now I have my Magic Bag, hot tea, a Kashi cookie and I’m just waiting for the men’s Olympic hockey game to start.  Twitter peeps convinced me to watch women’s curling and the minute I turned in they lost the Gold.  Damn.  Silver’s good too though!

Hockey time… Go Canada Go!!

I have a question.

With all of the formspringing going on, it reminded me that I wanted to ask you all a question…

Does my blog message come across?

I get a lot of comments about my food porn but rarely any about what my blog is supposed to be about.  I just wonder if maybe I should refer to it more often?

What do you all think the message I’m trying to convey is?

(of course if you just clicked over to formspring you know the answer now!)

-------------------------------------------------------------------------------

My Amazing Grass order finally arrived today!  Very exciting!  My green smoothies will go back to being a bit sludgier but oh so full of superfoods and vitamins!

For lunch you know I had to crack open the Amazing Meal!

IMG_2527

In the KA today:

  • ice
  • 1/2 banana
  • 2 huge handfuls organic spinach
  • 1/2 scoop original Amazing Meal
  • 2 tsp flax meal
  • about 1 cup skim milk (how am I out of UVAB?!!)
  • 1/2 tsp chia seeds stirred into 2 tbsp coconut Liberte yogurt

IMG_2532

Oh how I’ve missed this!

I did get hungry a bit after this because of my tiny breakfast so I reached into the box of bars in the pantry and pulled out this Oskri Organics Coconut Bar…

IMG_2533

OMG.  It’s like one big flat coconut macaroon.  Too.die.for.

IMG_2537

I got this when I visited my Mom at Xmas.  I hope I can find these in Halifax.

Work was silly busy…so dinner was late yet again.  This Monday I need to get a handle on things so I can start being off at 5pm!

Tonight’s meal was carby goodness from heaven.  I have been planning this one all week, since I got chicken on sale (finally!) and stocked up.

Chicken Alfredo with peas, spinach & tomatoes

IMG_2554

I cooked off a couple of small boneless, skinless chicken breasts and chopped them into bite size pieces.

IMG_2548

While cooking, I got the spaghetti on to boil.

For the last 3 minutes I added about a cup of frozen peas to the boiling pasta.

IMG_2545

While the pasta drained, I mixed up a quick alfredo from a packet…using skim milk and Olivina margarine.

IMG_2544

To which I added a couple of huge handfuls of baby spinach to wilt after the sauce was removed from the heat.

IMG_2550

Using the empty pasta pot, I reheated the chicken pieces…added the drained pasta and peas (with a sploosh of warm water to unstick the pasta)…then added the sauce…and one chopped up tomato.

IMG_2546 IMG_2551IMG_2552

Stir carefully with tongs to coat…then serve!

Sprinkled with green onion, fresh parmesan, and ground pepper.

IMG_2556

Fancy!

This made about 3 servings but could easily be 4 if I’d made more pasta.

Anyone have a recipe makeover for alfredo?  I always use the packet to keep the calories and fat low, but I’d rather make my own if I could find a healthy version.

Dessert was a lifesaver.  Crankypants girl really wanted chocolate so I pulled a Deep Chocolate VitaTop out of the freezer to have with my tea…

IMG_2564 IMG_2561

So good.  Truly a fab treat.  It totally hit the chocolate spot!!

Happy Friday night everyone.  I’m off to do some more yoga stretching in the hopes that I’ll be able to take myself to the gym tomorrow after another good night’s sleep.  Send me happy muscle vibes please!

Bandwagon

Wow, busy day.  Totally sidetracked and trying to get shiz done I almost forgot to blog!  mayday!

Sadly, I awoke in pretty much the same pain as I went to bed.  I guess my back wasn’t a fan of the shovelling yesterday.  Although I actually think it was sore before I went out there…it’s not like I was lifting anything all that heavy.  Stupid human body.

So instead of stopping at the gym I stopped at Starbucks.  Three guesses what’s in my cup.  Anyone?

IMG_2486

Still a little frustrated with the work situation from yesterday but a night to sleep on it and a chat with the big cheese brought me back down to the ground.  That, along with starting early and finally reaching the end of a project that had been plaguing me made today a little easier.

Toast with peanut butter and jam helped too.

IMG_2493

Cracked open a second flavor of Crofter’s Superfood Spread today.  This one with black currants and pomegranates.  Deeeelish!

IMG_2491

After this I landed up getting sucked onto the formspring bandwagon.  Holy Hannah, it’s a time sucker…but super fun.  Turns out FH is quite a popular guy.  I guess because I make him sound all mysterious around here.  LOL.  I just figure if he wanted to be on a blog, he’d have his own so I don’t need to be telling his life story for him…besides, it’s MY blog!  (right, Amy?)

So far only one asshat question.  Of course, it’s still early!  Funny enough, the douchey question was actually quite valid but it was delivered in such a rude fashion that I didn’t feel it warranted a full response.

Anyway, check it out and ask something!  Leave me a comment if you are on formspring too!

In between a zillion phone calls and Q&A I ate yogurt for lunch.

IMG_2488

Liberte Greek mixed with Liberte Coconut with sliced banana, a bit of granola, and hulled hemp seeds.  I’m kind of addicted to hemp.  Must be the BC girl in me.

IMG_2489

Afternoon snackie was grapes and light cheddar…

IMG_2497

And popchips.  Sour Cream & Onion.  This flavor is the winner so far in my books.  It’s the most “chippy” to me.

IMG_2499

Speaking of popchips, don’t forget to enter the giveaway…I’ll be announcing the winner tomorrow!
