Midnight Muncher

So for the sake of confession you should all know that last night I was awake until all hours and polished off about 1/2 of a large bag of popchips. booo hiss. Laying in bed frustratingly awake makes me snacky!

I did take a melatonin after all of that, but you know what it did?  Made me sleep in like a rock star this morning and I totally missed my weekly conference call.  Thankfully it was postponed anyway because the bosses are away but I didn’t know that when I slept in.

This insomnia really needs to take a hike. In the meantime I morning medicate with delicious coffee.

And tasty healthy breakfasts with organic vanilla yogurt, sliced bananas, walnuts, and cinnamon.

Before lunch I decided it was a good time to walk over AGAIN to get my car.  The guy left me a voicemail this morning saying he was sorry if I was inconvenienced but he waited as long as he could.  Um, he didn’t wait until their advertised closing time so I’m not sure that explanation flies with me.  Unfortunately he was on lunch when I got my car so I couldn’t tell him my opinion on the subject. Instead he’s just lost my business.

I ate this super delicious Honeybar I found hiding in the cupboard as fuel for my walk.

When I got back I made a fun lunch.  Over-medium egg on Squirrelly toast with light cream cheese and wilted arugula.

At the end of the day I had a massage appointment. My tummy grumbled while I was on the table! Probably because Laura and I are also foodie friends and tend to talk food while she works on me. :)

I grabbed dessert before dinner to tide me over. Dark chocolate.

Dinner involved a few of this week’s leftovers with a sweet twist.

Black beans, quinoa, carrots, red onion, red pepper, lime juice, cumin, salt & pepper all mixed up and used as quesadilla filling.  Roasted pineapple and shredded low-fat mozzarella completed the deal.

After dinner I had work to do for both my regular job and my small contract.  Thankfully both were taken care of fairly quickly and I think I now have time to run a quick vacuum through my place before it’s too late to annoy the neighbours.

There’s an apple on the counter for late night snacking if necessary.  But I won’t need it, right?  Riiight?! :)

Margarita Toes

So apparently not having my laptop on hand makes me a bad night time blogger.  Sorry gang!  Farm girl has my computator on a road trip but she’s coming home soon.  :)

Since I didn’t have my weekly conference call yesterday I decided to spare an hour and run out for a mani/pedi.  I’ve gotten kind of lazy about doing these things myself, but I’ve also realized I really enjoy the me-time and brief pampering session when I’m having a particularly stressful time.

Before I left, I ate half of this super deeeelish hummus and veggie sammich

Steady Eddie bread with hummus, light cheddar, cucumber, red onion, carrots, and a big ol’ handful of baby spinach…

Soooo yum!  Hummus and cheddar were totally meant to be together!

I ate the other half when I got home.  I was famished.  In fact, I really wanted an iced coffee while I was out but decided that the mani/pedi was treat enough so I skipped the coffee and came home…but I realized almost immediately I should have bought it because I was trying to cure the craving with everything else in the house!

As soon as I finished the sandwich I also ate a bowl of grapes and a blueberry bran Vitamuffin

I tried sipping on water, but 30 minutes later I was digging through the pantry again.  I settled on a dish of Cinnamon Sugar In Snax Pita Crisps…they did the job well enough.  Nom!

After work I debated between the gym and yoga.  Since Katie and Lex couldn’t make it to yoga I thought I might just go do some cardio…but in the end I decided on yoga because I didn’t make it to any classes at all last week.

Holy hell, could I tell I took a week off!!  I was sweating like crazy, could NOT find my breath, and my quads just were not into the practice at all.  I pushed myself really hard though so I felt really good when I left. 

Must not skip a week again!!

It was quite late when I got home so I settled on a quick salad and garlic cheese bread for dinner.  The bread wasn’t the best choice, but I figure I earned the calories.  :)

Simple salad:  baby spinach, cherry tomatoes, baby cucumbers, carrots, raisins, EVOO & balsamic splash

These little discounted treats may have made their way into my shopping basket as well.  Um, danger danger danger!!  Unbaked PB & chocolate deliciousness.  Like a raw Haystack Cookie…only peanut buttery.  Seriously crack-like.

This morning I definitely need a workout to recover from my workout.  Plans include a walk around the neighbourhood in the sun and a late afternoon trip to the gym for some weights and cardio.  And get this!… I’m actually cooking dinner!  Ha!  It’s been a while.

Fire Burning

This weekend was a bit of a snackfest.  Not the end of the world as most of it was planned, but it’s launched my body into a snacking frenzy!

Must retrain brain not to eat continuously!!

The good news is that I made it through Costco unscathed!  They took the Garmin back no questions asked.  I didn’t buy anything else.  And I avoided the tasty, tasty hot dogs.  Yes, I like hot dogs and Costco makes the best ones!!  I just try to have like only one a year and I hadn’t earned one today.  Go me!

Instead I came home for chicken and veggies.

Coconut Chicken Fingers to be exact.  The coconut was still out from this morning’s oats, so I decided to run with it.

Served with steamed broccoli, baby carrots and plum sauce/light mayo for dipping.

Oh, and burnt silicon pot holder.  YUCK!  Ya, super duper smart me turned on the wrong element and nearly set the kitchen on fire.  Go me.

I set the broccoli to steaming and went into the living room.  I was sitting on the couch and thought I saw something flash out of the corner of my eye.  I looked again and could see flickering in the kitchen window…so I ran out there and sure enough…friggin pot holder on fire!  Smashed it out with the tea towel and threw it in the sink.

But not before it melted silicon all over the flat top.  Ugh.

A little later after a bit of airing out I decided to curl up for the evening so we made tea and I made popcorn…

I realized while I was sitting here lounging and talking to my Mom that I never went to the gym today.  I didn’t even think about it really.  How weird is that?  So I guess tomorrow will be a do-over!

And I just ate a bowl of yummy granola and really want another one.  At midnight.  What is wrong with me?!! 

Don’t answer that.

Snackypants

Pretty quiet afternoon/evening. 

After picking FH up from work I was ready for an afternoon pick-me-up.  I grabbed a couple of my Valentine’s peanut butter cups

Um…confession…I sorta ate the rest of the tube.  Seven of those little buggers.  Ah well!

While deciding what to make for dinner I decided to bust open these Snapea Crisps that Krista sent me…

Curious little munchies.  Reasonable ingredient list.  A bit high on fat and calories considering they are essentially baked peas…

But tasty!  in an odd sort of way.  I think they are puffed or popped somewhat like a popchip. I dunno.

Dinner was a bit weird…but it was one of those stand in front of the open fridge and stare kind of days.  I just couldn’t figure out what I wanted.  Not really hungry for a meal, but in need of more than puffed peas!

I decided veggies were the way to go and grabbed a variety for roasting.  Broccoli, cauliflower, carrots and cabbage.

Roughly chopped and tossed with EVOO, balsamic, maple syrup and s&p. Roasted in a 425 degree oven for 25 minutes (stirred part way through).

With five minutes left I sprinkled on some navy beans we had in the fridge…maybe 1/2 cup or so…

It was actually pretty yummy!  Got in a couple of veggie servings, some protein, and have a dish of leftovers.  Nice.

While sipping Rooibos tea I decided to add to the already fairly snackerific day and opened up the box of Kashi Oatmeal Dark Chocolate Cookies

Soooooo deeeeeelish!  Soft, chewy, hearty, chocolately, oatmealy goodness!  nom.  :)  A little small for the 130 calories per cookie, but as long as I don’t sit down with the whole box, I can handle it.

Ohhh, I think that’s a challenge!

Couch Time

I’m watching Survivor: Heroes & Villians while I type this so forgive me if I’m scattered or out to lunch.  I’ll save the commentary but leave you with these notes so far:

  • I still heart Boston Rob even if I’m not supposed to
  • Stephanie is still hard core. I love that she’s back yet again
  • We’ve already seen boobs from Sugar and Cerie
  • We’ve already seen medical twice in the first 30 minutes
  • Amazingly enough, some of the girls learned from previous seasons and are wearing shorts instead of just bikinis

It's a totally good night for me to have the big couch and TV to myself.  I’ve been grumpy most of the day.  Up early, sore shoulder, missed workout, long day = cranky Jaime.  FH is down in his den watching some man-stuff on his computer.  :)  Probably safer for him there.  ha!

This afternoon I tried to snack my way to happyPopchips

I finally realized I was really thirsty so once I got my hands on my sippy cup I felt better.  Water is almost always the answer to snacking!

Dinner was just leftover Mexican Lasagna Casserole with more quickie guacamole

The snack cravings continued so I tried to keep it healthy(ish).  Chocolate to the rescue!!

Along with my first ever Deep Chocolate VitaTop.  Y’all were right!  These are definitely the best ones.  So moist and yummy.  :)

I knew I was saving the chocolate ones for a reason!

These seem to have finally hit the spot and now I’m curled up with my Snuggie, my sippy cup, and the remote all to myself.  Sometimes it’s the simple things, eh?

The One Where You Saved Me

Tonight could have easily become one of those nights where I just snacked my way to bed…but once again, blog to the rescue!!

It’s hard to eat chips, cookies, and Halloween candy for dinner when you know you have to present your blog readers with photos of your food.  :)  Thanks you guys!!

I did start out with some more chips and dip…yummy!

But after eating that and chugging a bottle of water I decided there would be no moping around and shook off the funk.  A hot shower works wonders.

As does biting the head off another evil peanut butter pumpkin.  Someone has to keep the infestation under control.

I stood staring into my fridge for a long time and just could not find anything I wanted for dinner.  Then I realized it’s because I didn’t want dinner food…I wanted breakfast food!

There was a very sad, very overripe pear sitting in the produce drawer just calling my name.  Chopped and sauteed it with a little margarine, sprinkle of brown sugar, and big shake of cinnamon.

Poured it atop a bowl of Liberte Svelt organic vanilla yogurt and Kashi Honey Almond Flax cereal.  With decaf tea.  Warm and cozy!  Hit the spot.
