No Breathing Room

Tis the season for craziness I suppose!

Today was..

Wake-up, drink coffee…

Talk to Mom on phone.   Finish work.  Reheat leftovers for dinner.  I’m a nice girl so I gave FH the leftover pork tenderloin.  But don’t worry I got half of the leftover mashed potatoes.  :)

Strange sounding combo but I was working with leftovers so I topped my reheated taters with sauteed zucchini & black beans…and sprinkled with old white cheddar.

Cheese makes everything better!

It was actually really good!!

Did dishes, finished putting up Christmas decorations, put away Christmas boxes, washed Christmas glassware.

Vegan for a Day

Katy, I am making it happen!!

Many of you probably don’t realize that November is National Vegan Month (hehe, there’s an extra little shout out for Cali!).  Now, I think that’s just Canada, but maybe it’s the US too because a lot of folks have been trying out veganism around the blogosphere lately.  Maybe it’s just a coincidence?  Either way, I’m happy to be a part of the Vegan Challenge that Katy and Michelle have painstakingly put together.

In fact, those two girls are tackling a whole week of veganism. #veganweek for you Tweeps.  Follow along.  I have been!

Katy and I share a similar love of bacon, burgers, and all things meaty so I’m truly enjoying her posts about how it’s going so far.  When the gals included the option to try being vegan for a day I was totally sold on the idea!  I mean, half the time I am inadvertently vegetarian anyway so this wouldn’t really be that far of a stretch.

Except…FH is home.  And he made plans to host guests for dinner tonight.  And serve steaks or his homemade meaty spaghetti.  Doh!  I was sad that I might not be able to tackle vegan day.  But it has all worked out!  The one guest is still coming and they are still having the spaghetti, but I’m bringing myself a wicked salad from the salad bar at Pete’s Frootique.  Win, win!

So without further ado…My Vegan Day begins!

First swap-out…unsweetened vanilla Almond Breeze instead of creamer in my coffee.  Hardly a crime.  I lurve almond milk and use it when I run out of milk and creamer anyway.  Besides, it’s about a gazillion less calories anyway!

Breakfast…no swaps needed.  I just went with the tried and true banana oatmeal, which I make with the almond milk anyway so this was a no-brainer.

In the pot: 1/2 cup unsweetened vanilla Almond Breeze, 1/2 cup water, 1/3 cup oats, 1 very small banana, 2 heaping tsp flax meal, sprinkle of raisins

On top:  more raisins, pumpkin seeds, scoop of all natural organic peanut butter

Deeeeeeelish.

I see Amazing Grass, fruit, hummus, and a whole lotta veggies in my future!

This probably isn’t the best place to mention last night’s dinner…let’s call it ironicTurkey Burgers!!  These are hands down one of our favorite meals and I haven’t made them in forever (seriously!  I had to go back to Oct-08 to find the recipe on the blog!)…but the leftover old white cheddar reminded me of the recipe so I put it on the meal plan for the week.  They never disappoint!

I’m reprinting the recipe here so it’s easy to find. (The search function has been buggered ever since I changed my domain.)

Rachel Ray Turkey Burgers

  • 1 lb extra lean ground turkey (or chicken if that's your thing)
  • 2-3 green onions, chopped
  • 4 oz extra old white cheddar, crumbled (light cheddar does NOT work the same)
  • eyeballed handful of grill seasoning (like Montreal Steak Spice)
  • 2 tbsp horseradish
  • 4 buns
  • grainy mustard
  • optional: mayo, tomato, lettuce, etc.

Note: these have to be grilled on a Foreman or some such appliance (or in a frying pan) because if you cook them on a regular BBQ type grill, the cheese just drips through the grates and is lost.

  • Preheat grill.
  • Mix together (with your hands people!) the meat, onions, cheese, seasoning & horseradish. Divide into four even balls and form into patties.
  • Grill (3-4 minutes per side).
  • The original recipe recommends cranberry sauce and the grainy mustard. We use light mayo and the grainy mustard, and top ours with tomato slices (and lettuce if we have it).

That's it! So yummmm!

Last night’s were served minus the mustard because I totally forgot!  And with a simple spinach salad dressed with Balsamic Vinaigrette.  Deeeeeelish.

Here I am!

So I wonder if my late evening posts are going to disappear in lieu of couch time with FH.  I guess we shall see.  Last night’s did!

We watched UP!  Super cute.  What a beautiful story!!  And Pixar’s animation never ceases to amaze me…it gets better and better with every movie.  Two thumbs up.

-------------------------------------------------------------------------------This morning was a change of my usual pace.  FH asked for a ride today so I finally got up extra early and got my workout in!!  Nothing like having my run out of the way before starting work!  (If only my morning brain would clue in to this every day!)

I graduated up another interval on treadmill running this morning.  Actually I think I skipped 9 minutes and went straight to 10 minutes.  :)  Yaaieeeeeee!!

  • 2 minute walking warm up
  • 10 minute run, 2 minute walk, 10 minute run, 1 minute walk
  • 5 minutes incline speed walking
  • 30 minutes, 2.1 miles (3.38 km), 200ish calories
  • 2 x 1 minute plank, 30 crunches, 30 reverse crunches

So nice to come home after that for coffeeeeeee…

Later today I really want to try to get downtown for that damn X-ray.  My shoulder/neck has been awesome all weekend (*knock wood*)I can even roll over in my sleep!  But today the pain is back a bit…booooooo.  We shall see how work plays into my schedule.  At least if I want to work late, my workout is already done!

Dear Mother Nature…blech.

So I was laying in bed this morning, thinking about getting up…when I heard a car drive by and thought to myself “that sure sounds like slush on the ground”.   And sure enough…this is what I got up to!  SNOW!

Effing hell.  Yesterday I was running outside in the crisp air and blue skies wearing only a sweater and a scarf.  Bugger.  At least it didn't require any shovelling as it’s the wet kind of snow that seems to be melting away pretty much on it’s own.

I gladly cuddled my coffee mug this morning.  Half-caf with blend cream and demerara…best way to enjoy coffee!

As bad luck would have it today wasn’t a day that I could hibernate indoors and avoid the snow.  Murphy’s Law that I would have another doctor’s appointment and had to venture out.  I wanted to allow extra time to get there, so opted for an Amazing Grass Green SuperFood protein bar for breakfast.

Although if you didn’t tell me it was choco-PB I wouldn’t have known.  It’s tasty but peanut butter isn’t the flavor I noticed. 

Lotsa protein…probably more than my average breakfast so I’m seeing how long it keeps me satisfied.

Now I’m putting my nose to keyboard and stomping away as much work as I can.  Project Energize project for today is to make sure no loose ends for work are floating around heading into the weekend.

Running With Gaga

Another outdoor run success!  Yaaieeee.  I attribute it to…

  • running at an embarrassingly slow pace  :)
  • crisp cool weather
  • quiet day on the trail
  • a couple days of rest
  • Lady Gaga at the beginning of my playlist

Today I bumped up to 4km.  Including walking warm-up, walking cool-down, stretching, and the run I was back in the car in under 40 minutes (approximate based on iPod).  I’m soooo pleased!

After my run I added on a few pushups, crunches, and squats…the chowed down the last two Pumpkin Cream Cheese muffins…I was shaking I was so hungry!

Now I’m off for a quick doctor’s appointment…then tonight sushi and Nova Scotia Symphony with Angie and Lynn.  Fun!

Today’s to-do list is short due to being out of the house a lot…
