People, I don’t know where my head has been. I completely forgot to blog last night. And I didn’t take pictures of my snacks, etc. And the day before I forgot to take lunch pictures. I hope I’m not going batty. :)
But here I am now! Better late than never right?
Yesterday…
Since Monday’s morning oats were so yummy I thought I’d make another batch. This time I skipped the blueberries and added a glop of Cinnamon Raisin PB instead.
I put cinnamon in the coffee too so it was a cinnamony kind of morning!
For lunch I wanted to use up a few things that have been hanging around in the fridge too long…so I toasted up a PC BM multigrain flax bagel, schmeared it with Rancher Acres goat cheese, and topped it with sliced tomato and spinach.
That poor spinach! I bought it like a week ago to make salads and never even opened it. I’ll be powering through it for a couple of days because it’s looking pretty sad.

Amazingly tasty blue-black seedless grapes for a snack before heading to the chiropractor.
My chiropractor is in a different area of town and actually right across the highway from the ocean so I had hoped I could find a place to go for a walk after my appointment, but I don’t know the area well at all and rush hour was starting so I decided just to get the heck out of there and went for a brisk 20 minute walk around my neighborhood instead. I try to avoid the gym on chiro days so as to not undo his work.
For dinner I had been dreaming of Salmon Noodle Casserole (a la Mrs Furious) but got the idea of cheese sauce on the brain so made some mods to the recipe (OK, changed the whole damn thing).
In the end I wound up with homemade mac ‘n’ cheese with broccoli.
The can of salmon I bought ended up being full of bones and skin!! Ewwwwwww. Who wants the bones still in their canned fish? Makes no sense to me…so I got annoyed (and grossed out) and ended up tossing the salmon.
The meal was still great though! Just lacking in protein. Smart macaroni, with homemade cheese sauce made with extra old white cheddar and a sprinkle of parm…filled with fresh steamed broccoli bits. Deeeelish.
Then I ran off to meet Angie, Farm Girl and Lex for coffee at Starbucks, where I enjoyed my new favorite bevvie… (decaf) Grande Coffee Misto with two pumps of pumpkin syrup.
There may have been a bigass chocolate chunk cookie too, but since I took no photos you have no proof. :)
Upon returning home I caught up on some work emails, then curled up with the cat on the couch to watch SYTYCD Canada from the PVR and eat the rest of those awesome grapes. I realized while laying there that I hadn’t blogged, but it was after midnight and my eyes were half closed. Sorry peeps!

They look like concord grapes! I'm eating some right now. They are the MOST flavourful grapes EVER! I mentioned them last week sometime wondering if anyone knew of any wines that were made from them. YUM.
Girl I have been CRAVING mac&cheese w broccoli for like a WEEK! It's on my "things to make" list in my head. Trying to work it in! I've got so many cheeses it would be like a 10-cheese sauce! lol
