A new reader, Jennifer, left me a note the other day asking about cooking eggs in the microwave. Now, I’m no expert (I blew up an egg I was trying to micro-poach just a couple of weeks ago) but I thought I’d give a quick info session on how I’ve been preparing my egg whites lately.
Super easy!!
I use a small ramekin (1 cup size…came with my Corningware set). Spray it lightly with cooking spray. Then just add your egg whites (I use about 1/4 – 1/3 cup) and any seasonings or mix-ins you like. Today I used only a splash of milk and some salt & pepper, but often I add a little shredded cheese or fresh herbs or green onions. Beat lightly with a fork to mix.
My microwave takes just over a minute to cook these (try starting at 45 seconds then assess in your own microwave). After one minute, I check them and maybe stir a tiny bit to get the juices up to the top, then cook again for about 15 seconds.
That’s it!
While the egg is cooking I make my toast, stir my coffee, etc.
Today I put my egg on top of a slice of multigrain toast with some Cheeeeeeze Whizzzzzz. Yes, fake cheese but I found it in the fridge and couldn’t resist. :) Topped the whole works with some salsa. Deeeeeelish. Enjoyed with my coffee and a side of watermelon.

I make my egg whites that way, too! Although, I put a plate over the ramekin because my microwave loves to blast it all over the place!
It fits perfectly on an english muffin this way!
I left you a comment when you blew up your poached egg in the microwave, explaining how not to do that. Did you ever try it? Did you even see it?

Dave introduced me to microwaving eggs a couple years ago, and I thought it was the silliest thing ever!
Now i'm hooked! I buy the pourable egg whites from costco, stick some peppers in the eggs, and nuke the buggers for a 2m or so

I find that it cooks egg whites especially better somehow.. any other way I've tried egg whites, they stick to the pan or whatever I'm using to cook them. Nuking them in my bowl seems to work perfectly!
I often cook a whole egg in the microwave almost the same way, spray a dish, crack egg, whisk around, nuke, add it to a wrap, with salsa and cheese and ta-da breakfast wrap in less than a minute, its a great filling breakky and easy one to do at work

I make them at least every other morning and I love them. Although I just crack two eggs and toss the yolks (I do this only because I'm into organic eggs now and have never seen organic yolks in a carton), sprinkle with S&P and nuke in the ramekin or small bowl (english muffin sized) for 1 min 30 sec and perfect every time.
I've had so many egg explosions in the microwave until I perfect it! lol
