Creamy Citrus Tart

The day after I received the invitation to Justin and Jessica’s Shrimp Boil I was sitting at my physiotherapist’s office reading Canadian Living when I came across this recipe for a Creamy Citrus Tart and knew I needed to make it for their party.

What screams Springtime more than fresh lemons and limes?  Not much!

Squeezing lemons at midnight is fun and stress relieving.

Lime zest is under rated.  Just a pinch does wonders.

Coconut Graham Crust?  Oh yes.

Three layers of smooth, creamy, sweet, citrus deliciousness.  It’s like cheesecake and lemon pie got together with some friends to make a dessert baby.  Make this for your next dinner party.

Catching Up

What a couple of weeks it’s been!  I have no idea how, but I feel run ragged.  This whole impromptu dog ownership while trying to re-join the dating world is EXHAUSTING.

Thank gawd Spring seems to be trying to come around!

Over the last few days I’ve managed to get my hands on three FREE Starbucks petites.  I figured if I’m going to have afternoon coffee, it might as well be Starbucks so I could get a freebie (or three!)

For the first time ever I am really impressed with SB’s baked treats.  Usually I find them kind of dry (although I continue to buy things anyway!) but each of these was delicious and really moist!! 

I think my favourite was the Peanut Butter Cupcake…now if only it was three times larger!! :)

Other foods that have kept me fed lately which are worth mentioning…

Strawberry Oatmeal.  Made with extra UVAB, cooked banana, fresh simmered strawberries, and topped with toasted almonds.

Bagel crisps matched with crack hummus.  When in doubt, garlic breath never ruins a date.  Honest. ;)

When the fridge gets empty, there are always spanakopita in the freezer.

Yesterday Chibi got cozy in the back seat for a Saturday road trip.  She pretty much loves the car rides!  All curled up in a tiny ball almost the whole time.

We visited my Mom, had coffee with my friend Christy, (ate a whole bag of treats this new doggie Mama inadvertently left within doggie grasp), and made a pit stop for the Island’s best burger.

Go to Nanaimo.  Go to Gilly B’s.  Order the Canuck burger.  Now.

We drove our exhausted asses home and promptly fell asleep on the couch watching a movie.  Thankfully we woke up, reset our clocks forward, and got on with our Sunday.

The weather is azz, so comfort food is on the menu for Sunday dinner.

Open for the Season

Well, for today at least. I mean the door people!! Geeesh. Don't be dirty. ;)

Since my plans for playing hookey and trotting off to the lawn place didn't seem to be working out, I opted for a little sit on the back deck with my lunch. We haven't even brought out the patio furniture yet because it hasn't really been nice enough consistently to bother...so I just dragged a couple of dining chairs out there instead.

I had a little read with Jamie Oliver again, and browsed my camera manual. So much to learn.

Lunch consisted of another big dollop of homemade guacamole with FSTG multigrain chips.

...and some crunchy organic carrots. Look at these skinny-minis!

Finished up with some vanilla Sesame Snaps. Deeelish.

I have also...

- completed lots of work
- cleaned my desk (again!)
- finished the last load of laundry
- taken my vitamins
- started the Greek salad for dinner
- sent out the slew of emails to coordinate plans for my trip to Victoria next week (I leave on Saturday morning!)

Now I'm going to burn through another half hour of work so I can get to the gym by 4:30 and beat the work crowd. :)
