Pom Parfait

Coconut Liberte yogurt with banana and pomegranate arils. Oh boy!

I’m here to tell you that Savvy Julie’s Perfect PB Kiss Cookies are quite awesome!  They were easy to make, they taste great, and they are super duper cute!

They are also DANGER. Of all the cookies and treats I’ve had floating around here lately these have caused the most damage. I ate about a half dozen throughout the day!

While shopping for cookie ingredients I figured I’d better put some veggies in my basket for lunch today.  I guess I knew I’d be all over the peanut butter sugariness!

After work I was sooo not feeling the dinner I planned.  I decided to snack on some tortilla chips and see how I felt after…

Eventually I decided just to go ahead and cook the salmon I had in the fridge…mostly because I was too lazy to go out for something else. :)

Salmon pinwheel stuffed with cream cheese and shrimp….it was OK…I overcooked it.  With baked zucchini…which was deeeelish.

In preparation for the busy weekend ahead I opted to do some chores around the house, prep a few things for tomorrow, and curled up on the couch with Love Actually and hot chocolate.

Oh, did I mention I acquired yet another Starbucks mug? *grins*  It’s an addiction I swear. But it’s seasonal and I only had one Xmas mug.  Who among us could resist that cute candy can handle?!!  And it has snowflakes inside!!!  You know I HAD to have it. :)

Waiting to Settle

I’m currently sporting a food baby in ma belly!  I think I just ate dinner for lunch.  It didn’t seem that big until I chowed it all down.  haha.

Apple Crisp with a Twist

Being a lazy Sunday, my eats haven’t been too blog worthy so I thought I’d just give y’all a post about a baked treat I threw together today instead.

A very simple but tasty twist on classic Apple Crisp

I added pomegranate!  Tis the season!

I have had several crisp recipes over the years, but this one I ripped out of the Sobey’s flyer last year works every time.  I think it’s the stirring in of the melted butter at the end that makes the crumble topping turn out the way I like it.

First I seeded a fresh pomegranate.  I’ve done enough of these now that I’m pretty good at it!  :)

Then peeled and chopped three of the apples I had in the fridge.  One unidentified yellow Nova Scotia apple, one regular size Honeycrisp apple, and another Honeycrisp the size of a small child’s head.

To the chopped apples I added a big handful of pomegranate arils (approx 1/2 cup), then the flour, brown sugar and cinnamon as per the recipe…and about 2 tbsp original POM juice.

Added the mixture to a small sprayed baking dish…

For the topping, I mixed the flour, brown sugar and oats according to the recipe…but also added more cinnamon. Then went half and half with POM juice instead of all butter.

Sprinkled it on and baked for 35 minutes at 350.

Perfectly cooked apples…soft yet still with bite.  And extra pops of flavor and crunch added by the pomegranate bits.  Deeeeeeelish.

Makes 8 small or 6 large servings.  I like mine warm with a big drizzle of cream or milknom nom nom.  :)

Kerplow!

OK peeps…who is good at designing little logos and such?  Clearly I am not equipped for these sorts of things!  LOL.  Hence my ghetto attempt at creating a superhero-style logo for Project Energize.

Can anyone help a girl out?

Today’s focus was on the Health portion of the Project.  Specifically, remembering to take my vitamins and calling my doctor for an appointment to yet again discuss my neck injury and the possibility that I have a mild ulcer.  I’m happy to report I choked down all three of my glucosamine supplements, two multivitamins, and two calcium chews today.  As well, I actually got through to my doc’s office and have an appointment on Friday.

Success!  Baby steps people, that’s all it takes.

Plain yogurt (I’m a convert…yet another one of us that happily enjoys plain yogurt without that feeling that I’m eating yucky health food…that’s not to say that I don’t like vanilla better though!), with sliced banana and a crumbled Pumpkin Cream Cheese muffin

Egg salad sammich for lunch!  With light mayo, green onions, chopped pickles…all on toasted whole wheat with baby spinach…deeeeelish!  Oh and baby dill pickles.  nom nom nom.

This afternoon I started feeling pretty blah.  My neck started acting up (of course!) so my plans to join a few of the girls for a FitMix class tonight got nixed, which bums me out.  I should’ve known better than to plan something like that, but I want to try these things too!  Booooo. 

I perked myself up with a cup of decaf tea, a chocolate almond granola bar, and a POM smoothie!

Pretty basic.  Into the blender:  1/2 banana, couple of tablespoons of plain yogurt, big glug of POM juice, matching glug of vanilla Almond Breeze…

A little on the thin side, but tasty!

So my stupid neck and I are now off to tackle a bit of cardio at the gym.  I wish I’d gone mid-day but I thought I was going to that class tonight.  That’ll learn me!  Elliptical here I come.
