Moroccan Stew

Last night’s blog post was pre-empted by getting home a bit late and wanting to be in bed by midnight.  I didn’t get to bed on time but I sure tried!

Yesterday’s green smoothie took a turn to the chocolate side thanks to this soy milk I found hiding in my fridge.

In the KA: whole frozen banana, 3 big handfuls baby spinach, 1/4 cup whole oats, flax meal, Amazing Grass, chocolate soy milk.  Deeeelish.

For lunch I switched it up from the bigass salad.  Instead I made a turkey sammich!

On Squirrelly toast with olive oil mayo, Dijon, tomatoes and baby lettuce.  Veggies on the side.

I always flip through any magazines I have laying around when I’m putting together my weekly meal plans to see if there is anything I want to make.  This Moroccan Vegetable Stew caught my eye and even though I don’t own a slow cooker anymore I figured I’d give it a go anyway.

Butternut squash, sweet potato, and dried apricots all in one pot?  Well OK!!!

Instead of simmering all day in a crock pot, I just simmered it over the lowest heat on the stovetop until the squash started to get tender….about an hour or so.  Then turned off the heat and let stand for a couple of hours.  When dinner time arrived I returned it to a medium-low heat, added the chickpeas and apricots and let simmer for about 20 minutes.

Seemed to work quite well!  I would add more cumin next time, but that’s just me.  The apricots were definitely the star of the stew.  And I had intended to serve it with couscous but I was in a crazy hurry and didn’t have time.

The rest of the evening was spent hanging out with Bachelor #3.  We can call him Rob now (and Rob if you are reading this…surprise! haha) as we’ve comfortably landed in the friend zone now. :)

He convinced me to watch Big Bang Theory (which I pretty much love now) so I forced him to watch one of my faves…True Blood.  He got through Season One so we decided to watch Season Two together.  I’m on a mission to convert the whole world to Team Eric…mwahahaha.

We had beers, popcorn, strawberries and three episodes of over-the-top vampirey goodness before calling it a night.  Nothing like a midnight walk with the doggie to finish the night.  zzzzzzzzzzzzzzzzzzzzzzzzzzzz.

oh yes I am totally Team Eric. Cant wait for season three!!!

I love Big Bang Theory! I never made it through the first season of True Blood. Not sure why. One of these days I'll probably give it another go.
