PowerBerries

Yesterday…seems so faaaar awaaaay.

With no appointments on the horizon I spent the whole work day in my jammies. haha. 

Coffee and a green(ish) smoothie for breakfast…

Blended up: ice, 1/2 banana, baby spinach, flax meal, Amazing Grass, frozen blueberries, the last of the UVAB, and vanilla soy milk to round it out.

As satisfying as a good smoothie is I always find I crave something to actually chew with my meal.  Seemed like a good time to finally pull out the samples I received from Kardea Nutrition ages ago!

Since I was turning my second cuppa coffee into a homemade vanilla soy misto I opted for the Chai Spice flavoured bar…

I loved this bar!  Just the right hit of Chai flavour.  Yum!  And at only 140 cals it’s not an overboard snack.  I also like that it contains 7 grams of protein…that’s a lot more than many similar products.

A little later lunchtime rolled around.  Time again for that big silver bowl.

In the salad: baby spinach, tomatoes, cucumbers, red onion, and feta cheese.  Dressed with olive oil, white wine vinegar, and s&p.

Oooops, a little light on the protein!  I squashed that with a piece of Squirrelly toast spread with natural PB and Blueberry Lavender jam.

For the late afternoon sweet craving I dug into this bag of Trader Joe’s Powerberries I received from my friend Mel. She warned me that they are addictive and she was not wrong!

Only a handful was eaten at the time, but I kept going back and the next thing I knew THE BAG WAS EMPTY. 

Dinner came in the form of this year’s first spaghetti squash.  I picked up this perfect sized little guy a couple of weeks ago and I finally worked it into the menu.

Cooked up in a shallow water bath in the oven, shredded, and used as a base for a quick ‘n easy pasta sauce.

Slightly spicy pork sausage and fresh mushrooms helped to bulk up the jarred sauce…

I recently discovered spaghetti squash too and wondered where it had been all my life!! next time I make it, I definitely would love to put mushrooms in my sauce too!
