Homemade Beef Stew

The weather here has definitely officially turned to Fall temperatures.  The sun is still shining but it’s brisk out there!  I even had to turn the heat on this week.  It also got me dreaming of lovely, warm comfort foods.

Specifically Beef Stew!

Last year around this time, Angie made a pot of stew she raved about.  She used this information from Chef Michael Smith to create her stew so I saved the link and finally put it to the test myself this weekend.

Simple ingredients: garlic, onion, red pepper (I didn’t have celery), gold potatoes, rosemary, carrots and turnip (actually rutabaga)…

You will also need beef broth, a nice red wine, and of course the stewing beef.

Prep is quite easy.  A bit of cubing, a few chunks, and a reasonably close eye on the soup pot.

I found the trickiest part to be getting the temperature just right for searing the beef, but it certainly isn’t rocket science and I got the job done just fine. :)

No bay leaves on hand, so an extra sprig of rosemary seemed the thing to do!

Load the pot with your veggies, set the timer and walk away.  Come back in an hour or so and you have dinner ready and waiting.

Eat up right away, or be like me and let it sit in the refrigerator overnight.  This is one of those “even better the next day” meals.  Nom.

I have never been a fan of stew unfortunately. I did pull out my slow cooker this week though - it's that time of year again. It was so nice to come home from work and smell dinner!

I made some yummy stew about a week ago. I would have done it sooner if I had realized it was that easy! I used sweet potatoes instead of regular potatoes which made it really nommy.
