I cannot believe I used to write so many posts without photos. Especially recipe posts! I hate recipes without photos...how are you supposed to know what the finished product will look like?
On that note, I thought I would share some photos of one of my favourite go-to muffin recipes. Banana Oatmeal Muffins.
(this time with fresh blueberries!)
Recipe update: Note there are no eggs and you can use non-dairy milk so these are easily made vegan.
- 3/4 cup whole wheat flour
- 3/4 cup all purpose flour
- 1 cup large flake oats
- 1/3 cup brown sugar
- NEW: 1/4 ground flax meal
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- pinch nutmeg
- 1 cup milk (I used 1/2 cup unsweetened vanilla Almond Breeze + 1/2 cup skim milk)
- 1/2 cup applesauce
- 1/2 tsp vanilla
- 1 cup mashed overripe banana
- (optional): 1 cup fresh blueberries (or any berries)
- Combine all dry ingredients in one bowl.
- Combine all wet ingredients (except berries) in another bowl. Add mashed banana last.
- Add dry to wet and stir just until combined. Don't whip or over mix. Carefully stir blueberries in last.
- Scoop into a sprayed muffin tin. Makes 12.
- Bake at 400 degrees for 18-20 minutes.
- Cool in pan until easy to handle, then let completely cool on wire rack. Enjoy first bite while still slightly warm!

Funny how much blogging has changed isn't it? My old posts were the same, lots of writing with the occasional picture.
