Friday Love

Since I've been back in BC I've been having a pretty much non-stop love affair with my beloved Silver Hills breads...but this week I'm switching it up for toasted sandwich thins.  There's just something about the chew factor on these that I love.

While perusing my multiple coffee mugs the other day I realized that I hadn't seen my Calgary Starbucks mug since I arrived back from my road trip.  A little digging through a box led me to this beauty still all wrapped up!

Lunch was inspired by the cute dishes Cat brought me as a housewarming prezzie.  She said she thought of my little lunchtime snack plates when she happened upon these while shopping one day.  :)

After whining about my lack of dinner inspiration the other day I decided just to take a few cues from myself and dug through my own recipes.  A recent fave before I left Halifax was the super easy and deeeelish Coconut Shrimp.

Served with Coconut Mashed Sweet Potato.

  • 1 sweet potato (or yam), peeled, cubed and steamed.
  • 1 tsp butter
  • 1 tsp coconut oil
  • pinch of dark brown sugar
  • s&p, cinnamon, and flaked coconut for garnish

Steam sweet potato until easily pierced with a fork.  Move to bowl or pot and add butter and coconut oil.  Mash with fork (or masher) until desired consistency (I don't mind mine a little lumpy).  Add cinnamon, brown sugar, and salt & pepper to taste. 

Easy peasy recipe.

Plate and sprinkle with coconut.

First Friday night in a while that I just stayed in all by my lonesome.  Single gal chillin' on the couch with a girlie movie and a girlie snack.  :)

Oh, but it is THE BEST FLAVOUR!!! I also inhale the entire tub whenever I allow myself the treat. Can't wait to try the coconut shrimp/sweet potato either. Looks delish!
If you hadn't picked up a Calgary mug, I would have made sure you had one sent your way. Clearly, it is the best. LOL!
