Well this week anyway. :)
Most of the day went along just as any other would. You know...scrambling out of bed, sucking back a coffee, taking care of important work shiz before running out the door for an appointment. Munching a Coconut Larabar in the car because I never make time for breakfast when I'm on the run.
Return home starving for a real meal...and thank myself for buying a boatload of fresh produce on Monday night!
Blackberries and blueberries topped with organic vanilla yogurt, granola, and thawed Farm Girl raspberries...
Get some work done. Deal with mortgage hoopla. Wish I'd found a broker in Halifax. Live and learn. Make warm and toasty lunch.
Sandwich thin schmeared liberally with crack hummus and topped with tomato slices and shredded light cheddar...toasted under the broiler...
Served with the first cherries of the season...nom!!
Go for a quick afternoon walk to the mailbox to get a bit of fresh air after waiting on a no-show from one of my furniture ads. People are rude. Make a drive to the post office to pick up a package and test out my new iPod car adaptor for impending colossal road trip. Yay!
Finish work and head to the gym to burn some calories in preparation for pub night. Hit the treadmill for the first time in a zillion years and manage to run 5 minute intervals for 20 minutes. Follow up with upper body strength and minor core work:
3 sets of 12 reps:
- overhead press
- hammer curls
- 21s on bosu
- barbell rows on bosu
- tricep pulldowns
- crunches
- planks (1 x 1 min, 2 x 30 sec)
Race home to shower and throw dinner together. Realize no time for original recipe plan so opt for bigass salad with chicken chunks...
Chicken sprinkled with curry powder, salt and pepper...sautéed in coconut oil...
Salad bowl filled with baby spinach, radishes, sliced green grapes, dried cranberries, chopped walnuts, and drizzled with honey...
Top the whole thing with sprinkle of shredded coconut. Realize next time something else needs to go with curry powder but chow it all down anyway. :)
Race around like a mad woman to dry my hair and make myself presentable for girls night out. End up with a ponytail but wear a cute necklace to distract from the fact that I haven't figured out how to style my new bangs yet.
Proceed to the Split Crow with my neighbour girls for a little bon voyage partay. Enjoy neighbour's band...Little Fish (part of Big Fish). Enjoy a few beers...Garrison Raspberry Ale (x 2) and Miller Chill (who knew?!).
Enjoy company of fun ladies. Why didn't we do this sooner?!
Joanne, me, Holly, Sarah. Beechville ladies represent!!
Convince Sarah to sing a song with her hubby and band.
Find out that apparently Tuesday nights are fun times for Halifax city workers...and convince these fine boys to let Sarah help paint a line...
Thank the other girls for not being irresponsible night owls like me and bringing me home at a reasonable hour. :)
Pat myself on the back for NOT binging on after-pub carby snacks before bed. Realize I should probably have stayed home and packed something, but smile and tell myself there's always tomorrow.
Right?

Looks like a blast!
Where do you get your coconut oil?
Hi Meg: my Coconut Oil was actually a blog sample from Tropical Traditions...but you can usually buy it at the grocery store in the natural foods section. It's a solid oil in a jar. Hope that helps!
That big ol' salad looks delish! Until reading your blog I had never thought about putting any of the things you put in your salad's in my own. Thanks for the inspiration!
You ladies really did it up last night, right proper! Painting the streets and all ;-) sorry cheesy I know. That tomato hummus cheese combo looks amazingly tasty!
Nellers: I personally believe pretty much ANYTHING can go in a salad! That one was kind of based on what I would put in chicken salad. :)
Miranda: we literally painted the town!
Jaime, seriously your salads make me want to live with you. seriously love this combo.
You had a crazy night, looks like fun!
