Shrimp & Fiddleheads

Last night's dinner ended up being super late so I wanted to keep it light...but also wanted to stick close to what I had put on my meal plan for the day.  "Shrimp & Veggies" was all I wrote...so that made it easy, but also left me scrambling for a "recipe".

I had a bag of fresh fiddleheads in the crisper, and since those don't keep long they became the veggie of choice.

Since the lemon & feta combo was so good in the Fiddlehead Salad last week, I decided that same combo would work well warm and with shrimp!

  • Get pot of water boiling, add salt.
  • Rinse and trim fiddleheads.  Add to boiling water.  5-6 minutes until tender.  Drain and rinse immediately with cold water. 
  • In a large non-stick skillet, heat olive oil and sauté diced onions and minced garlic...about 3 minutes.  Add peeled shrimp, squirt with lemon juice and season with cracked pepper.  Cook until pink then flip.
  • Add drained fiddleheads.  Squirt with more lemon, a pinch of salt and more pepper (and I sprinkled in some Greek seasoning).  Add a small knob of butter (optional) then toss everything together.

  • Add chopped tomatoes.  Toss.  Add crumbled feta cheese.  Toss again and serve.  (I found a fair amount of liquid in the pan, so used a slotted spoon to serve).  Top with additional feta.

(I didn't offer any measurements or quantities because I was just winging it to make a dish for one...just guesstimate and I'm sure you'll be fine!)

Seriously deeeelish.  Could be served over rice or couscous for a more substantial dish, but I enjoyed it straight up.  Fiddleheads could easily be replaced with asparagus or even broccoli.

Dinner was late because I ended up going to the gym late.  I don't know if anyone noticed but I haven't been to the gym in a week and a half...soooo busy and just decided I needed a break.  But now that I'm preparing to spend 11 days sitting in a car, I need to get my sweat on!!

I tackled my version of Fitnessista's Whole Body Toning Sesh but added some rowing to start and some extra tricep and ab work just because.  I did end up skipping the final cardio piece of the puzzle because it was getting late...but today is cardio day so it will all work out.  :)

After dinner I did a little extra stretching and a few restorative yoga poses before settling in to play on the computer and watch TV.  I have been trying to follow along with Yoga Pose May (key word there is "trying") and almost forgot that yesterday was my pose day!

A little hard to take a photo of myself in savasana (corpse pose) truly being relaxed, but you get the idea...

Sometimes laying on the floor is just what a girl needs to let go of the world for a few minutes.

Hi. I'm new to your blog, for about a week. You've got me very curious. What are "fiddleheads". I'm a Jersey girl and thought I was pretty good with my variety of veggies, but never heard of that one!

Those fiddle's look cute with the shrimp, cause they are the same swirly shape.

I agree, sometimes I lay flat on the floor and just close my eyes and "forget" about everything for awhile.

Fiddleheads are only available for a very short time in the Spring...and I think only in certain locations. They are actually the early shoots of wild ferns...that have to be picked just as they start to "bloom".

I attribute the taste to be similar to asparagus...different for sure, but if you like different varieties of green veggies you'd probably like these.
