Olympic Friday

Today is a much better day.  Amazing what some couch time, reality TV, and a good sleep can do for ya!  Plus I got to sleep in a bit and work has continued to be productive today.

Might I hazard to say that I am actually going to finish a smidge early (to make up for yesterday’s marathon 10 hours), maybe make up yesterday’s workout, and pick up some snacks for FH and I to enjoy during this evenings Opening Ceremonies!? 

Who’s watching the Olympics tonight?  WooT!

Leisurely started the day with coffee…

And easy peasy toast with PB and jam…

Not just any jam.  SUPER jam.  Crofter’s Superfruit spread with raspberries and yumberries to be specific.  Not sure what a yumberry is, but the PB&J was SUPER tasty…

For lunch I was totally craving a smoothie, but FH is napping in the living room so I thought better of firing up the KA.  Can you imagine being abruptly awoken by the whirring destruction of ice and frozen banana?  haha.

So I went with a wrap instead…

With hummus, red onion, beets…

(H-woman asked about the beets.  That’s just raw beet that I peel and keep in the fridge.  I just chop off a bit when I need it…big knife, no shredder.)

and light cheddar and spinach…

Twas extra tasty but I still want a smoothie.  Maybe after the gym.

Good idea with the beets. I have only ever juiced raw beets but have been trying to figure out what to do with them otherwise. I will give this a try!

I'm going to sound like a jack ass but I make a smoothie almost every morning and my boyfriend always wakes up AFTER me. lol...always wakes him up. OOPS! LOVE YOUUUU

If it was morning, he'd be upstairs so I'd let it rip. :)

He's been having a really rough sleep week so if he's grabbing a nap I don't like to take that away from him.

I was very tempted though. I want that smoothie! hehe.

Christy: have you ever made roasted beets?...oh so good!

AND, I will most def. be watching the Olympics. Just me and Mr.T., wearing our Olympic mitts, sitting on the couch, wishing we were there....hehe.

Julie: it's a raw beet...they are hard like a carrot. :)
