However, in true foodie fashion I was cooking while watching. Yes, running back and forth between the living room and kitchen. It’s been a while since I gave y’all a recipe so here it is…
Cream of Cauliflower Soup with Roasted Garlic
Ingredients:
- 1 head of garlic, unpeeled but papery outer skin removed
- extra virgin olive oil
- 2 medium leeks (1+ cups), white part only, sliced
- 1 tsp dried thyme
- salt & white pepper to taste
- 3+ cups chopped cauliflower, bite size-ish
- 3 cups reduced sodium chicken broth
- 1 can (12 oz) fat-free evaporated milk
- Freshly grated Parmesan cheese
Directions:
(Garlic can be prepared up to 1 day before needed.)
- Preheat oven to 400 degrees. Cut off 1/2 inch slice from top of garlic. Place on sheet of foil. Drizzle top of garlic with a bit of olive oil. Roast 45 minutes, until soft. Let cool 5 minutes, then squeeze garlic out of skins. Mash with fork and set aside.
- Heat drizzle of olive oil in large non-stick soup pot at medium heat. Add leeks, salt, pepper, and thyme. Cook, stirring, 6-8 minutes until leeks are translucent.
- Stir in garlic. Cook 30 seconds.
- Add cauliflower, broth and milk. Bring to gentle boil over medium-high heat. Reduce to medium-low and cook 8-10 minutes, until cauliflower is fork-tender.
- Let cool 5 minutes, then puree as desired. (I just used my immersion blender and pureed the whole thing…but you could use a blender too.)
- If eating right away, reheat. Sprinkle each serving with Parmesan cheese.

I had already eaten, and it was late, so I just did a mini-taste test. Yum-o! (If I do say so myself). I can only imagine what it will be like for tomorrow…these things are always so much better the next day, right?!
Sadly dinner wasn’t as exciting. The last of the Chinese food leftovers…
At least it was mostly veggies…even if they were covered in sauce.

Thanks Lynn! Lynn and I traded new Kashi bars the other day…so I wouldn’t buy a whole box of another flavor I don’t really like, but these are way better than the Pumpkin Pie ones. Full size without the weird icing stuff. Yummy!
Sadly no exercise today, but my neck has loosened up a bit so hopefully it will be good to do something tomorrow.

Mmm, thanks for the recipe review, looks delish!! I thought that was a great idea for them to hand out recipes cards. I'm going to have to dig out mine and them a few out.
