So last night FH came up for bed early in an attempt to beat his insomnia. I decided to stay up and out of his way for a while in the hopes that he would indeed get some zzzzz’s while having the bed to himself. Mostly I just cleared a couple of shows from the PVR, but around midnight it occurred to me that I could be preparing a breakfast cookie!
Yes, apparently I am slow on the bloggie bandwagon!
I had a quick look at Fitnessista’s recipe and then just decided to kind of wing it. :)
I stirred together:
- 1/2 banana, mashed
- big glug unsweetened Almond Breeze
- 1 tsp chia seeds
- 1 big tsp flax meal
- 1/3 cup whole oats
Smooshed this onto a small plate and set into the fridge to “steep” overnight.
This morning I pulled it out and topped it with the other half of the banana and some warmed White Chocolate Wonderful peanut butter.
Mission accomplished. T'was a chewy, tasty morning treat! I’ll let you know later if it had staying power. I’m guessing it does!
This morning also marked the beginning of a mini coffee adventure! I used up the remainder of our Christmas Blend coffee yesterday, so instead of buying a new bag I decided to tackle the taster pack that Angie gave me for my birthday…
I’ve tried most of the roasts in there before except for the Guatemala Antigua so I decided to start with that…
Two thumbs up. Much lighter than our usual Cafe Verona, but still yummy and actually less of that bite that Starbucks coffees can sometimes have (although I usually like that bite!).
In preparation for the weekend:
- clean office (still have bags from Xmas laying around!)
- reorganize living room (FH put away the decorations this week, but I still haven’t put our regular stuff back!)
- make Corn Chowder (although this was supposed to be for FH and he won’t even be home for dinner!)
- set up Garmin (finally going to start using it tomorrow!)
- make shopping list (errands, etc)

I must be living under a rock as today is the first day I've heard of breakfast cookies, too.
I will definitely give this a whirl on my next high carb day, which is Sunday, but who's counting? :-)

Guatamala is my favourite roast! I do it for all of the coffee tastings I have to do with the Starbucks big shot's!

I tried the cookie and didn't really like it, then again I added the protein powder in, I should try it without! :) I'll try your recipe instead:P
That cookie looks awesome! I must say that I also love the Starbucks bite.... but my fav is the cappuccino!
