…back to a fun Weight Watcher’s recipe for y’all!
You may all remember the Diet Pop Cupcakes. Well, I really don’t do much in the way of diet pop anymore, so instead I use Club Soda. Zero calories, zero additives, same effect!
(or Soda Club which is what you get when you turn the French side forward. Don’t confuse Soda with Tonic. Tonic is full of sugar!)
This works for me because I prefer vanilla cakes. If you like chocolate you may want to use diet cola or root beer…or if you use club soda, use some extra chocolate in the form of cocoa powder or something similar.
I add a little extra vanilla extract to pump up the flavor.
For those of you that have never seen this…it’s about the easiest recipe ever. I’ve posted it before but who ever goes looking that far back on a blog?
Club Soda Cupcakes!
- Dump cake mix in bowl.
- Add can of soda. (and vanilla if you want).
- Stir.
- Scoop into well-sprayed cupcake pan(s).
- Bake according to cake mix directions.
- Let cool completely. Important. Must be very cool to remove from pan.
- Finish cooling upside down on wire rack.
I added a few mini M&M’s for fun decorations.
Nutritionals: you have added no calories (if you don’t decorate the tops like I did) so just use the NI given on the cake mix. In this case it’s 170 cals for 1/12 of the box. I made 12 cupcakes, so it’s 3 points per cupcake. I would normally make 18 cupcakes which would bring it down to 2 points.

Oh, what a good idea! I've heard of the diet soda thing before, but I would never have thought of using club soda.
I just finished making low fat banana bread muffins using applesauce and Eggbeater egg whites. Delicious!
I've seen it many times, still need to actually try it..
