It actually turned out to be a good thing that I skipped the craft fair and tackled my to-do list. Let’s revisit…

While I worked, I snacked on coffee and a Pumpkin Cream Cheese muffin…
Later some plain yogurt with sliced banana and Kashi Honey Almond Flax cereal…
A leftover Larabar to tide me over through grocery shopping (under $30 this week!!)…
And a couple of clementines when I got home…
Dinner was inspired by the bag of local beets I have in the veggie drawer. While flipping through the latest Rachael Ray magazine I found a recipe for a ricotta and beet pasta dish, so thought I’d give it a whirl.
It was OK. The beets weren’t cooked enough (by following their directions) and I find it a bit bland (this happens frequently with RR recipes)…
It was labelled four servings but I got at least 5, maybe 6 out of it. I froze some of it so hopefully I can season it up and make it a little more tasty in the future.
After all of the standing, bending, carrying, cleaning, cooking, and puttering today my neck/arm is VERY angry with me…so my evening consists of hugging my heat pack and trying to find a reasonably comfy position to lay in on the couch. :(
Thankfully I have decaf tea, leftover Monster Cookies, and The Amazing Race to keep me entertained…
