While FH napped away his jetlag (flew in from Scotland today, in case I never mentioned that before) I decided to make him a treat to pack along to Ontario with him. He’s not sure what his living arrangement is when he gets there, but chances are it’s dormitory style with a bunch of other stinky boys…and there surely won’t be homemade cookies there!
Recipe: Chewy Oatmeal Chocolate Chip Cookies
Courtesy of: my gal Heather (she came to the rescue with this recipe when I whined that my last few batches of choco chippers didn’t turn out)
Ingredients:
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs (room temp is best)
- 1 tsp vanilla
- 2 cups flour
- 2 cups whole oats
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 300 grams chocolate chips (I prefer milk chocolate, but use whatever you like. Even Glosette Raisins work well.)
Directions:
- Preheat oven to 375 degrees.
- Cream butter, sugar and brown sugar in a large bowl.
- Mix in eggs and vanilla.
- In a separate bowl, combine flour, oats, baking soda, baking powder and salt.
- Add dry mix to wet mix in a couple of stages, combining well.
- Add chocolate chips, combine.
- Roll dough into small balls and place 2 inches apart on lightly greased or parchment lined cookie sheets. (I placed in freezer for a few minutes to firm up because they are quite soft.)
- Bake for 8-10 minutes until cookie bottoms are golden brown.
Yields somewhere around 4 dozen.
