So Much TV

…so little time.

Oh wait, apparently I have tons of time…and control of the remote!  :)  I love premiere season.  Eastwick anyone? 

Admittedly I’ve been sucked into the TV most of the evening…no workout, no yard work, not even yoga.  Bad girl.  I painted my toenails, does that count?  :)

I did whip up a dinner concoction before settling in for the night.  After the disappointment of last night’s dinner not being what I’d hoped, I decided to take the leftovers and play around a bit.  Basically it became a glorified tuna noodle casserole.

I sauteed up a bit of diced onion and added most of the package of spinach that needed to be used up.  Then I reheated the mac ‘n cheese from last night using a bit of hot milk to keep it creamy.  Tossed in some leftover corn I had in the fridge, a can of tuna, and stirred in the sauteed spinach & onions.

Put it all in a sprayed casserole dish and covered with cheesy breadcumbs and cooked at 400 for 10 minutes, and under broiler for 3 minutes.

Topping: 1/4 cup breadcrumbs, 1/4 cup parmesan, palmful paprika, s&p

A little dry to be honest, but it worked.

Backtracking for the rest of the day... 

I tried to fit in veggies where I could knowing dinner was going to be carb-wonderful. 

In the spirit of using the spinach, I made a green smoothie.  It’s been ages since I had one and it did not disappoint.

In the blender: 1/2 frozen banana, 1/2 cup frozen blueberries, 1 tbsp flax meal, 3 tbsp vanilla yogurt, 3 handfuls spinach, 1/2 cup unsweetened vanilla Almond Breeze.

Lunch saw the return of a bigass salad.  I realized that’s part of my problem the last few days…no salad!!  Today I went Greek-ish.

In the big bowl: romaine, cucumber, tomato, red onion, the last of the Rancher Acres goat cheese, Greek seasoning, and 1 tbsp Renee’s Spring Herb dressing.

I wanted to eat my salad during my conference call, but it’s way too crunchy!  I grabbed a Kashi bar to eat with my cup of coffee instead…even that I had to mute myself for.  LOL.

And in true ANTM spirit I decided to clean out the ice cream container while I watched.  :)  FH bought this Hoof Prints a while ago, and since he’s gone now I wouldn’t want to see the last serving go to waste.  haha.  I thought it was peanut butter cups in there but was pleasantly surprised to find they were caramel instead!  Good thing it was the end of the container…

Yes, my PVR is starting to overflow with Fall TV Season Bounty. When I sat down last night to select something to watch while eating my dinner, I was momentarily confused by all of the choices I had! I recorded Eastwick, haven't watched yet.

Your salad looks so delicious, as does your tuna casserole. The salad reminds me that I should be using up all the gorgeous local cucumbers and tomatoes on my counter. Thanks :)

Yes, me and my PVR have rekindled our friendship as well!!! Although I have had to download a few of the shows I wanted to watch!!!

You HAVE to eat the last serving of ice cream - it would be crying shame to let it waste! :)

I have to get a PVR. I watched the first 20 minutes of Eastwick but I couldn't commit to the last 1/2 hour because we really need to start getting to bed earlier at our house. It looked like it would be a fun show.

What do you think of the usual housefull-o-headcases on ANTM this season? Lordy, the nastiness! I like Laura and Nicole.
