I need a gravy boat

…and a meat thermometer.  Remind me later, would ya?  :)

Know why I need those things?  Because tonight I made a fabulous roast chicken and gravy!  nom nom nom

You see…the thing is that I’m a good cook but I never make “traditional” stuff.  I get too caught up in recipes and new things to concoct so I am trying to slowly broaden my cooking horizons with some regular meals and tonight it was the chicken.

Who knew this was so simple?! 

  • Filled chicken cavity with a few chunks of onion, lemon, bay leaves, and garlic. 
  • Brushed exterior with melted butter and seasoned generously with sea salt, fresh pepper, thyme and sage. 
  • Placed in a roaster on top of some chopped carrots, onions and a few more chunks of lemon.  It was around 5lbs so I roasted it at 350F for 1:45 mins.
  • Removed to a rack and let rest until remainder of meal was ready.

For the gravy:  Poured pan juices into a small saucepan, brought to light boil, added a large splash of white wine and simmered until reduced a bit.  Shook together 1 part cornstarch to 1.5 parts cold water, whisked it slowly into simmering sauce.  Reduced to low and whisked until thickened.  Deeeeelish.

For a side dish I roasted some fingerling potatoes while the chicken was resting.

Seemed like a good meal to enjoy a glass of white wine with.  I mean, I had to open it for the gravy you know!! ;)  Yummy!

And to make the night complete, I have a banana bread baking.  Can’t wait to dig in!!

Earlier today I had my massage.  The therapist seemed to think by my description that he should easily be able to solve my neck/shoulder issue.  I smirked at him because the last guy thought that too, but was never able to totally pin it down.  Hence, a year later I’m still in pain.  So this was an awesome massage but he had to admit that he couldn’t find anything wrong.  LOL.  He has another idea for next time so we shall see.  I certainly feel better and he was an excellent masseuse so I will go back, but I have no belief that he’ll cure my pain completely. 

I forgot my water bottle and since it’s imperative to hydrate after a massage I picked up a treat at the market…

It’s been a busy day.  Even managed to bang off a few things on my to-do list, including taking care of our incredibly squeaky bathroom door.  Yes, I’m so handy.  WD-40 is magic.

that chicken looks delish! I'm the same as you, I love to cook, but I rarely cook traditional foods...

Your food sounds and looks wonderful. As does the massage.

Don't know if you are a runner or not - I'm new to you - but when I was running high(for me) mileage weeks, where I felt the pain was in my neck. Perhaps you are overtraining? I hope you can figure out what's causing the pain for you.

I make almost the exact same type of roast chicken accept that I shoved some fresh rosemary in the cavity too. I cook mine at 400F for less time and it makes the chicken super golden and the veggies get ridiculously caramalized. A tip from the Barefoot Contessa. It's awesome!
