Kookie Dough

Happy Friday y’all!!  I don’t know about you guys but I was actually pretty happy when I woke up and it was Friday. 

I was immediately saddened by the fact that there was no coffee waiting for me when I got up.  That’s what happens when you forget to pre-set it!  A lazy gal’s trip to Starbucks fixed things up.

Triple grande non-fat vanilla latte.  And for some reason a Blueberry Buttermilk Muffin, which I immediately regretted…it hurt my tummy. :(

Water and I haven’t been getting along lately so today I opted for hot water with lemon.  Totally worked!  Warms me and hydrates me!

For lunch I had to make up for that stupid muffin-breakfast so salad time it was.  Simply mixed arugula with a segmented navel orange, olive oil and lemon juice…

…and topped with leftover salmon from last night. Simple & delish.

Before heading to the gym after work I added a little protein and natural sugar to the mix.  Organic non-fat lemon yogurt and blueberries.

Oh right…before heading to the gym I prepped dessert.

I know.  You are looking at those chick peas and thinking…dessert?

Well, who knew that you can mix those chick peas with maple syrup and peanut butter and end up with dessert hummus?  Apparently Evan – The Wannabe Chef - did!

Yup, this here is Peanut Butter Chocolate Chip Cookie Dough Hummus.

Shut the front door.

It took like 5 minutes to prepare (I abandoned peeling the chick peas…forget that shiz!) and I stashed it in the fridge for later tonight.

Off to the gym I went for a Friday night workout.  Holy moly, can I say that cardio routine #4 is definitely a “cardio sizzler”!  They wanted me to do three minute sets of jump rope, butt kicks, jumping jacks, jogging, and mountain climbers….TWICE!  I did one minute sets… x 3.  And then just about died.  Thankfully I’d done a few sets of the toning moves before trying to burn out my lungs.

Having nothing thawed out for dinner I decided to grab some take-out sushi on my way home.  Fresh rolled spicy tuna roll and real crab roll.

It looks like a lot but I dominated the whole works in about 10 minutes.

Now it’s time for curling up with the “cookie dough”, a sliced pear and a good movie.

Isn't that stuff amazing!!?? I made it a few days ago and it lasted all of one evening with 2 kids who loved it and a husband who eats anything that involves chocolate!

He had a few others I'd like to try too, and I have somehow managed to stockpile about 10 cans of chickpeas, so I think this weekend I'll try out another!

Hummus cookie dough??? That is something I'll have to try (I'll bet my kids would like it too, as long as they don't know about the chick peas part...)
