The day started off so pretty!
I’m totally in love with these new felt place mats. The solid colours make my boring food photos so much more fun (well, for me…how bout you?). Whole wheat English muffin with sunflower butter and leftover apple.
Sipped my coffee and added finishing touches to this week’s meal plan. All groceries were purchased last night…hopefully all I will need is to pick up fresh produce later in the week.
A fresh dozen eggs made their way into my basket and all I could think about was a boiled egg for today’s bigass salad.
In the big silver bowl: mixed greens, tomatoes, baby cukes, carrots, beets, yellow peppers, pot barley, olive oil and oregano dressing…
…and one slightly warm perfectly hard boiled egg. nom.
Photography classes started up again tonight and since they basically run right over the dinner hour I grabbed a little snacky in the late afternoon. Bolthouse vanilla chai that’s been chilling in my fridge for like two weeks….
…and my very last Honeybar. :(
For anyone that might be interested I put the notes and (mediocre) photos from my first photography assignment over on my photo blog. I promise next week’s shall be far more exciting.
Before class Charmaine and I stopped by Starbucks to get drinks for sipping…I opted for a grande non-fat Vanilla Rooibos Tea Latte (and somehow an apple fritter found it’s way in my purse!!). Funny how I was in a photo class…with my camera…but there’s no evidence of these things!
By the time I got home I wasn’t hungry for the dinner I had planned so I dumped out a handful of baby carrots and dunked them in dessert hummus while I caught up on a couple more hours of work.
Sadly, the final photo from today is nowhere near as pretty as the first photo! Maybe tomorrow. :)

Absolutely love your blog!! I've been following along daily for 2 weeks now. I am in total awe at how healthy, yet appetizing your meals are..Would you be open to sharing your weekly meal plan/grocery list with us? I have countless cookbooks & diet books, but none of them appeal to me as much as your daily photos!
