So I picked a fine time to instil the power of will power in myself now didn’t I? Christmas baking week. Oh lord give me strength.
Typical of any Wednesday the day started off with a conference call. There was mucho coffee but my camera wasn’t within reaching length from my computer (where I was tethered with my headset). As soon as the call was over I made my late breakfast…Apple Pie Oatmeal…
In the pot: water, oats, 1/2 a Gala apple – diced, cinnamon, nutmeg, flax meal, raisins and a pinch of salt.
On top: brown sugar, hulled hemp seeds, toasted pecans.
Nice change of pace from the daily banana. Filling too!
This is where dessert intervened a weeee bit early. I had to be cutting up the batch of Nanaimo Bars I made last night (which look like a five year old made them for some reason!) and well, you know I had to taste test!
Looks bad, tastes great. For the record. :)
Don’t worry, lunch was all healthy ‘n stuff…
I had spinach salad on the menu, but hadn’t really thought of a protein. It was so dismal outside I definitely needed something warm so a poached egg seemed the way to go.
In the little silver bowl: baby spinach, organic button mushroom, tomatoes, cukes…all dressed with olive oil, white wine vinegar, s&p...and sprinkled with marble cheddar…
Poached the egg to medium, drained well, and sprinkled with a teeeeny bit of seasoning salt. So deeelish!
Since dessert preceded lunch I waited until late for today’s advent chocolate…
Dinner plans were a little vague and due to the (disgusting down pouring!!) weather there was no way I was heading out to get a couple of things for the next recipe I want to try, so I made due with things on hand. Spanakopita with carrot sticks and hummus…
Today was a day off from the gym so as to not anger my currently happy back. I used the extra time to get lots of work done so I could spend my evening putting together another batch of Christmas baked goods.
I may have licked the beaters.
Which served to take care of any snack cravings. Works for me!
