I had planned on cooking for my Mom all weekend, but typical of our usual visits we were constantly running around or running behind so we ended up eating out a couple of times. But last night before she went home I managed to whip us up a tasty, healthy meal.
Pecan Turkey Burgers with Camembert & Mango Salsa
Recipe on a whim...
Burgers:
- 1 pound extra lean ground turkey
- 2-3 tablespoons bread or cracker crumbs (I ground wheat crackers in my food processor)
- 2 tablespoons coarsely chopped roasted pecans (again, I whirled these in my food processor)
- 2 tablespoons finely diced onion
- fresh basil, chopped (to taste...I figure lots is best!)
- salt & pepper
- (I would also to have loved to have fresh green chilies or jalapenos for this!!)
- Mix everything together (with your clean hands people!). Divide into four portions and flatten into patties.
- Cook up on your indoor grill of choice (I heart my Cuisinart Griddler) or if you prefer outdoor BBQ, line your grill with sprayed foil so no juices drip away (you need the juices to keep the patties moist).
- 1 minute before removing from grill top patties with cheese (cover lightly with foil to help melt). I chose Camembert for something a little fancy schmancy.
- Serve up on a fresh, whole wheat bun spread lightly with olive oil mayo and topped with baby spinach and sliced tomatoes.
- For the killer kick in the pants we topped these with that fabulous Mango Salsa I purchased at the farm market last week.
Yes. I just did THAT! Deeeeeeeeeeeeeeeeeelish.
To be honest, I wish the salsa had a bit more kick...and I think next time I'd squeeze lime into the equation...I think right into the burger mix. Yesssssssssss. :)
On the side we had a yummy salad. Actually an Apple Pecan Chicken Salad salad from Wendy's we purchased the other night but never got around to eating. I tossed the chicken and spruced the rest up by adding baby spinach.
We used barely 1/3 of one packet of the Pomegranate Vinaigrette...it was crazy sweet...but still tasty.
The salad was big enough to share as our side dish.

And the best part is there are two more of those tasty turkey burgers hiding out in my freezer. :)
