After a busy weekend it was tough to face Monday morning. French Press helped.
As did a light breakfast. Kashi Go Lean (thanks Tia!), chopped Gala apple, fresh blueberries, and vanilla almond milk.
How better to put a spring in my Monday step than to find girl's night leftovers in the fridge?! :) I love putting leftover fancy cheese to use as a grilled cheeeeeese.
Yup, in between those slices of Big 16 you will find salami, sliced fresh fig, honey, and a generous schmear of double creme brie.
Ohhh. Emmm. Geee. :) Dry grilled on the Cuisinart Griddler. Served with nicoise olives and one big greenie stuffed with garlic.
This afternoon my FedEx delivery from at Honeybar finally arrived with my sample pack. Yum Yum!! I couldn't unpack it without diving in for a pre-workout snack.
I opted for one of the slightly smaller Everyone's Organic bars because they come in at only 120 calories. Super deeelish and chewy. In fact, it's so warm right now that this was almost downright gooey. Just the way I like em!
At Group Training tonight Tia focused on upper body strength training but threw in a bit of lower body torture too. Squat & Press...evil. Lunge & Curl...downright mean. Of course none of that compared the the crazy incline sit-up things she had us doing for our core work!!
Back at home I was looking forward to using up more leftovers in a basic Bread Salad. When I stayed with Tara during CCCRT she served me a Panzanella made with heirloom tomatoes that was just lovely. I decided to just wing it with my own quickie recipe.
Cubed (slightly stale) whole wheat baguette, halved cherry tomatoes, a bit of sweet onion...all drizzled liberally with olive oil and spritzed with a bit of white wine vinegar. With a big sprinkle of coarse salt and fresh ground pepper.
Rested the mixture while I cooked my egg, then served over a bed of baby romaine for colour and leafy greens.
Topped with an over-medium egg for protein and deliciousness.
Quick, simple, flavourful, and fun!
Last night I beat the heat by taking myself on an ice cream date to Cold Stone Creamery. A "Like It" Banana Caramel Crunch (made with Sweet Cream instead of French Vanilla) really hit the spot.
I considered heading out for another one...but instead settled for a bowl of Coconut Liberte...which for me is ALMOST a replacement for ice cream when I have a craving. It definitely saved a few dollars.
There is a lovely sunset going down right now which I think I shall go enjoy for a few moments. Happy Monday kids.

I am thankful that we do not have a Cold Stone Creamery here! It would be dangerous for me.
I actually preferred the Everyone's Organic bars. They were the perfect size and I love how chewy they are!
