Moving In

Tonight I’m going to cook my very first meal in MY new kitchen!  I’m actually quite pleased with the size of my kitchen…it has plenty of cupboard and counter space…a large sink…and room to move around.  It is lacking a place for a microwave and does not include a dishwasher (just yet!) but as a single gal I will survive!  Once I’m all settled and my bank account has recovered from my adventure of a lifetime I think this space will take nicely to a minor renovation and modernization too.  :)  (or you know, paint at the very least!)

Until then I shall call it my happy place and cook my little heart out.

Yesterday I didn’t do anything that could be referred to as cooking but I did manage to avoid having to eat out again.  Three weeks of restaurants is about my limit!

You’ll laugh.  I only packed one small box of pantry items across the country…because well, I can buy food here.  But I was NOT leaving the unopened jars of Supercrack or Chocolate Peanut Butter behind!

They are open now.  :)

Oh lordy people…did I ever miss that big silver bowl! (yes, I’m weird like that).  This salad was fresh and deeeelish.

In the big silver bowl:  organic baby spinach, matchstick carrots, local radishes, English cucumber, local blueberries and fresh basil…

All dressed with EVOO, a drizzle of honey, and a teeeeny sprinkle of coarse sea salt.

Topped off with goat’s milk feta.  Nom!!

I also inadvertantly may have found a great new massage therapist.  I’m here to tell you Google ads actually work.  I followed a link from my Gmail and found an RMT literally two blocks away.  I saw her this afternoon and it seems to me that she understood all of my woes as I explained them to her and I may actually be able to function tomorrow!  Tonight includes an ice pack and an attempt at very light yoga…

I'm DYING to find those bagels since I saw them on here the other day. YUMMY!

I had my microwave on a stand in the corner of the dining room (right side as you walk out of the kitchen). It was basically wasted space, and was a perfect spot for a microwave stand and cookbooks :)

The food looks amazing! And I have to tell you, the fact that you are preparing food in your new home is a sign that you are settled in. I personally never cook at places that do not feel like home to me. Good luck with making wonders in the new, big kitchen!
