In between a delicious dinner and a fabulous brunch I did do some cooking at home this weekend. :) On Saturday evening our friend Keith came by for dinner. He's in town for a lengthy Navy course so I offered him a home cooked meal while I can still pull it off.
Thankfully he's a health conscious guy so I was able to offer him turkey burgers and salad!
Instead of my usual Rachel Ray Turkey Burgers I had a hankering for a Greek inspired recipe so just sort of threw some ingredients together and wound up with a pretty tasty meal. :)
Simple recipe:
- 1 pound extra lean ground turkey
- 1 tbsp Greek seasoning
- small handful fresh basil, chopped
- 6-8 kalamata olives, pitted and chopped
- 1/4 cup light feta cheese, shredded or crumbled
- 1/8 cup egg whites (for binding)
- (would also have been good with diced red onions and/or bell peppers)
- 4 of your favourite burger buns (I bought sandwich thins)
- optional: hummus, tomatoes, lettuce (whatever toppers your heart desires)
Simple directions:
- Mix everything (except the buns and toppers) together by hand. Form into 4 patties.
- Either grill on a sprayed sheet of foil (so the cheese doesn't drip through the grill) on the BBQ or cook in a sprayed non-stick pan over medium-high heat. About 3-4 minutes on each side. Let rest 2-3 minutes before serving.
- Add to buns with toppers...enjoy!!
Keith and I schmeared our sandwich thins with Roasted Garlic Sabra Hummus and added tomatoes to complete our burgers....
No need for anything else on there...the burgers were moist and delicious...and the tomatoes made up for no other condiments on the bun.
Served with a mixed salad of fresh tender greens, tomatoes, red peppers, red onions, radishes, carrots, more light feta and Spring Herb Dressing...
Nom Nom Nom!
Last night I cooked up the two leftover patties and had one for dinner. Served open face on half of a sandwich thin with just greens and a tomato slice (I'm out of hummus and totally didn't need it)...
Turkey makes the best burgers! It's so versatile and forgiving!
