This morning I was excited to pour a fresh cuppa joe…
I actually saved my second cup to make an iced coffee sometime later.
Now that I have ripe bananas I knew I needed another green smoothie…
Ice, 1/2 banana, farm fresh spinach, Amazing Meal, chocolate whey powder, flax meal, UCAB.
For lunch…a bigass salad of course!!
Who needs dressing when you have salty light feta and a drizzle of EVOO? I don’t!
That came up a little light on the protein and carbs, so I added a slice of fresh oatmeal bread with PB & Crofters.
I don’t know what caused it but I had a serious craving for what I call lemon noodles. Probably the lack of protein earlier in the day. Whatever it was, it resulted in a simple and tasty dinner!
Boiled spaghetti…added chopped kale buds for last 3-4 minutes of boiling. Drained.
Sauteed sliced mushrooms and diced chicken breast in a drizzle of olive oil with lemon juice, salt, pepper, and minced garlic. Added a hefty splash of pasta water, more lemon juice and small nob of real butter to complete cooking.
Tossed pasta and kale buds into the pan and stirred. Salted to taste and served. OMG. Nom!!!
A light dusting of parmesan to top it off. Easy, refreshing, and healthy. So good.
And like a good girl, I hauled my behind to the gym. I managed to fit in cardio, strength training AND yoga. I think my body is thanking me for it (except maybe that damn sciatic nerve/pain that is still bothering me).
- 20 minute treadmill run (3 minutes running : 1 minute walking)
- Overhead presses, tricep dips, hammer curls, hamstring curls on the ball, 100 crunches.
- 10 minute recumbent bike ride.
- Followed by a FitFlow class with Katie. It was a light class tonight…thank goodness!!
And for dessert…fresh pineapple and blackberries (with Stonyfield Organic vanilla yogurt…not very photogenic!) and a big helping of Castle season finale. :)
It’s a big week for season finales. I’ll be reading a lot after everything wraps up. What final episodes have you been anticipating?

I'm excited, but a little sad, for the Lost finale. I watch a bunch of other shows but since that is a series finale it's the most important.
I am absolutely loving Parenthood. I am looking forward to the finale but at the same time I don’t want it to end! If you haven’t watched it yet, I would suggest checking it out. It has lots of laughs and drama. Plus Dax Sheppard is a babe :-)
