I finally kicked the headache I’d been carrying around all day (which was actually worse after massage!) around 5pm. I was working late to make up for time missed earlier in the day, so instead of making an early dinner I opted for a healthy snack to tide me over through yoga.
Liberte Greek yogurt, thawed raspberries and granola…
For tonight’s yoga, Lex was able to join me. I didn’t realize she’d never been to a yoga class so it was fun to introduce her to it! It was a good stretchy and warm class tonight! Yay for another yoga buddy!
I got to wear my cute new top! No Limit Tank in “Passion” from lululemon (haha, where else would it be from?!)…
I’m here to tell you it works! Built in sports bra and the band around the bottom stays in place so your shirt doesn’t flip up during downward dog! :)
After yoga I made a fun dinner out of leftovers from the freezer.
Sweet Potato and Black Bean Soft Tacos!
I thawed out two Sweet Potato and Black Bean Burger Patties. Crumbled them up and added a bit of lime juice and reheated in a non-stick skillet with a few tablespoons of sauteed onions. Added a few bits of fresh jalapeno and stirred in fresh cilantro when I removed the pan from the heat.
Split the filling between two small warmed Ancient Grains tortillas spread with Greek yogurt…topped with finely shredded light cheddar…
And homemade guacamole and chopped tomatoes…
The burgers made AMAZING filling. Hearty and delicious. And because the burgers contained almonds the extra crunch was a nice change of pace. I would totally do this again! I love finding multi-purpose ideas for a recipe!
Homemade Guac in an Instant
- 1/2 avocado, cubed and mashed
- big squeeze of fresh lime juice (I like a lot)
- fresh jalapeno, minced (to taste, I use 1/4 of the pepper)
- 2 tbsp onion, diced (red onion is best, but I used white)
- cumin (to taste)
- salt and pepper
- fresh cilantro, chopped
In lieu of dessert…which I soooo didn’t even consider because dinner was late and deeeeelish…a photo of the flowers I bought on the weekend. Tulips make everything cheery. :)
