Twas a busy weekend leading to the need for an extra blog post!
Being Easter but having no Easter Bunny visiting my house I was on my own to create some egg-y goodness…
Scrambled egg wraps: 1 egg, added egg white, old cheddar, greens, and kumato tomatoes…rolled up in two small Ancient Grains tortillas…
With coffee. Back to Starbucks Sumatra for now…
It was a gorgeous sunny day so I spent a while on the front step with a couple of magazines and a snack plate. Crack hummus, pita crisps, and baby carrots…
And sadly the last of the Girl Scout Samoas… *cries*…
Lots of chores done around the house in the afternoon…bathrooms cleaned, everything vacuumed, 3 loads of laundry, another box sorted and ready for a future yard sale. Ya, I really know how to rock a holiday Sunday!
I kind of murdered my lower back with all of the lifting, moving, etc this weekend so I took a few days rest from any working out or activity. Probably should have gone for a walk, but scrubbing the tub took priority. :)
For dinner I whipped up another batch of my Coconut Shrimp. Yum!
This time with Sweet Potato Fries! Tossed with coconut oil, cinnamon, cayenne & salt and baked in the oven…
And served with a tossed salad with Maple-Balsamic Vinagrette. My attempt at recreating the dressing serving to us by Chef Chris at Angie’s birthday dinner party. Yummy, although I think the key would be to have a better quality balsamic.
My recipe:
- 1/4 cup extra virgin olive oil
- 1/8 cup real maple syrup
- 1/8 cup balsamic vinegar
- 1 tsp grainy Dijon mustard
- big squirt lemon juice
- 1/2 clove garlic, minced (I grated on microplane)
- salt & fresh ground pepper
- fresh basil, minced (could use dried, but then it would require sitting to absorb some moisture)
Place all ingredients in a bowl and whisk until combined. I used a container with a lid so I could store it in the fridge and it’s easy to shake it up when needed.
Tossed one big tablespoon with organic baby greens, carrots, radishes and cucumber…
For dessert…a serving of Nanaimo Bar Fro-Yo atop a warmed Deep Chocolate Vitatop… holy yum!!!!
Tonight is slow-cooker night.
I’m preparing a small pork loin roast with healthy gravy (just winging it, so we shall see how it goes!) as part of Ali’s Healthy Slow Cooker Challenge. I’m totally looking forward to the leftovers already!

I just discovered those pita chips. They are dangerous! I had topped hummus and crackers for a snack just a few minutes ago and seeing this post makes me determined to remember to always add a vegetable too.

I use little mason jars and they're perfect for shaking the dressings. I realized that when I store them in the fridge after, they kind of solidify a bit though. So if I use ingredients that are all room temperature, I keep the dressing out and use it in a day or so. The WS balsamic makes ALLLLL the difference. Sometimes I just splash that on my salad by itself!
I need to add some maple syrup to my salad dressing, that sounds so good! :) hope your back feels better!
