This week (and last?) I have kind of been off the oatmeal wagon. Likely due to the blue skies and Spring-like temps! I’m not complaining! But my loaf of Squirrelly bread is coming to an end so last night I decided I’d better plan on something different for this morning.
Ta-da! Breakfast Cookie! I followed Fitnessista’s original recipe pretty much to a tee this time, and wouldn’t you know it’s the best one I’ve ever made!!
We now have protein powder in da house, so I was able to steal a half scoop of it to bring this cookie home.
In my cookie:
- 1/3 cup oats
- 1/2 scoop chocolate protein powder
- 1 tbsp Bee’s Knees Honey PB
- 1/8 cup UVAB
- 1/2 mashed banana
- cinnamon
- (I skipped the Stevia/sugar because I used honey PB).
“Iced” with Crofter’s Superfood Spread. Asia to be exact.
Too.Die.For.
With coffee…
Which I forgot to mention I’ve been taking with vanilla soy milk this week. Best coffee creamer ever. No need for sugar!
Come lunch time I grabbed the leftovers from yesterday’s lunch and dinner and created another super fab bigass salad…
Added some extra leafy greens and a drizzle of EVOO to the leftover Southwest salad and topped with the Salmon Salad…
Served with multigrain Tostitos for scooping.
Deeeeeeeeeeeeeeeeeelish. :)
So now I think I shall tackle a work project and get out of my jammies so I can go for a walk in the glorious sunshine.
Sun = instant better mood!

I have been using vanilla soy milk for the past week as well in my coffee. It's very yummy!
Almond milk doesn't seem to cut it in coffee :(
The cookie sounds great. I wonder what would happen if you baked it? Or warmed it up like an apple crisp thingie?

The cookie looks really good. Does protein powder make any difference to the taste, or is just more filling? I've been meaning to try making one, but don't have any powder.

Liz: Thanks for delurking!!! I didn't really notice the taste of the protein powder so I'd say in this case it just added to the chocolately-ness of it all. If I remember correctly I've made one with plain powder before and it was pretty bland.
Lunch looks amazing! It's always my downfall meal. I eat breakfast every day, and dinner, but my tendency is to snack my way through the day, and not bother with lunch. I'm making a real effort to change that, and always love your lunch ideas.
I here ya on the breakfast cookie. I love em so! I'm thinking I might need to stick one in the fridge for tomorrow.

I have a question on protein powder... What kind do you like best? I want to buy some because I know I sometimes lack protein on some days. I tried some of a friend's and it looked like the same type of big container that said Whey protein. I just can't get over the labels on the containers. The flashy, gimmicky-looking labels turn me off and each time I try to buy some I just can't bring myself to do it. I feel like the labels are equivalent to the "Hydroxy Cut" and other weight-loss gimmick labels. Help?
If you read my blog, you know I think everything goes better with chocolate protein powder!
