Fuelled Up

Today’s earlier post left a lot to be desired.  Sorry about that!  At least it included wine, right?  :) Hopefully this one is a bit more visually stimulating.

How bout a pic of handsome Mr. Stoopy to start?

And a obligatory snap of a cute coffee mug

And another fun bowl of creamy oatmeal a la Jess

In the pot: UVAB, water, oats, flax, cinnamon, 1/2 banana, 1/4 cup egg whites…

Topped with more cinnamon and peanut butter.

This was toooooo much.  Note to self: either egg whites OR peanut butter.  I barely made it through half the bowl.  That never happens!

After battling with my Blueberry most of the day, and getting through a few work projects, I broke for lunch.  I’ve been thinking about tuna salad for a few days so today was the day!

Tuna, Greek Liberte yogurt, capers, green onions, s&p.

On a bed of baby spinach and an ancient grains tortilla, topped with 1/2 oz of grated dill havarti…melted under the broiler…and rolled up…

With grape tomatoes and crunchy pickles

Because of the chiro appointment yesterday I didn’t make it to the gym so I promised myself a make-up day today.  Before heading out I snacked on a mini Clif Bar

Tonight’s workout was Day Three of Intro to Iron…managed to make it through most of the exercises…just no frog crunches for this girl’s lower back.  Subbed in regular crunches and bicycle crunches instead.

Afterwards I took my make-up free ghosty face over to the grocery store to stock up on a few fresh ingredients.  It's been far too long since I tossed up a bigass salad!

Turned these soft leafy greens into a fabulous Taco Salad!

Extra lean ground turkey, black beans, and homemade Mexican seasoning

IMG_2898

This Kraft probiotic cheddar was on sale so I thought I’d try it.  It says ‘very mild’ so I was concerned it would be flavourless, but surprisingly it’s actually very good!

IMG_2899

Tomatoes and red onions…

IMG_2900

Salsa and Greek yogurt on top…

IMG_2902

Multigrain crack Tostitos for scooping…

IMG_2904

Tea and Kashi cookies for dessert… paired with girlie shows on the DVR.  Good night!

I always cringe at the idea of eggs in my oats. Can you seriously not tell they're in there?

Yummy looking salad AS usual! :-)

I know you're into salads ("big-ass" to make a small ass, so I was just wondering if you've ever had Wholefoods' Blueberry Salad?

I had it a couple of weeks ago, so simple (spring mix/spinach, blueberries, blue cheese, toasted pecans, a few red onions, and balsamic vinaigrette), but SO delicious!!!

I love Mr. Stoopy...he's a handsome guy.

That is one hefty bowl of oats. I can see how you only got through half of it.

New to your blog. I love all the pictures. I am going to be a new follower :)

LOVE taco salad. I had fajita salad last night, super good, too! I'll have to try the egg in oats....not so sure about it, but I'll try!

Welcome Mom on the Run!!

Lynn: I saw your salad after I posted mine. I guess we are all starting to share thoughts now. haha.

Debbie: No Whole Foods here but that salad sounds friggin fantastic. Love the quote you left about bigass salads for a small ass. I hope you don't mind if I totally steal that.

Re: the egg in the oats...definitely can't taste it at all. Think of it like how you bake with eggs...you can't taste it in muffins or cakes right? Same thing here!
