I woke up this morning achy and stiff as all get out. Must be the super-slam of massage and chiro all in one week. Whatever it is, even my planned rest day yesterday didn’t seem to alleviate it so I’m taking a second rest day. Gotta listen to the body right?
So instead of stopping at the gym when I dropped FH off, I stopped at Starbucks.
Triple grande vanilla non-fat latte, extra hot. Yay!
If I’m going to be up that early and start work then I needs me some extra caffeine! (Helps that it’s also a full dairy serving…which we know I’ve been working on this week.)
Enjoyed with the Apple Berry VitaTop I thawed out last night…
So far, I like the muffins WAY more than the tops. This variety is dry. I dipped it in my coffee!
Because I ate so much earlier than usual, I made another small breakfast around 11am. My bananas are finally ripe! so I made a basic green smoothie…
- ice
- 1/2 banana
- 2 huge handfuls organic baby spinach
- 2 heaping tsp flax meal
- 1 tbsp whey isolate protein powder
- 1 cup UVAB
Simple, but so good. After this I had a regular coffee and tried out this Pumpkin Pie Kashi bar I picked up at my chiropractor’s office the other day…
Verdict: meh Loved the initial smell/taste, but I don’t think I like the “icing” stuff on top of these new Fruit & Grain bars.
My two breakfasts held me over pretty good, but I didn’t want my meals to get too far off track so around 1pm I made a light lunch.
Bigass salad.
In the bigass bowl: mixed organic greens, celery, carrots, beets, yellow pepper, red onion…
And shredded mozzarella…and dried cranberries…
Dressed simply with olive oil and s&p.
I don’t really love bottled salad dressings. Ranch was the only one I ever liked but obviously that isn’t one I like to have too often. What do you all like to use as a healthy dressing choice?
Served with some hummus and Kashi Honey Sesame for crunchy goodness…
And now I’m off to lose my cool on some poor internet service tech at my provider’s office. There is something seriously wrong with my personal email…and I’ve already been on hold for like 25 minutes. Grrrrrrr. This is eating up the extra hour I gained this morning!

Would love one of those lattes right now! I have been 'dressing' my bigass salads with hummus. Once you mix it, it is like a creamy dressing without all of the fat/chemicals/etc. Sometimes i just use a splash of balsamic vinegar (no oil). Works for me, especially with goat cheese in the salad. Goat cheese is a fav of mine too!
I always use 2 tsp oil and 2 tsp balsamic vinegar. SO delish!

I've always wondered about trying vita-muffins (I have seen ads for them in magazines and thought they were a joke, didn't know they were real!) What kind is best? Do you have to order them online?
I like olive oil and balsamic vinegar on my salad best. A month in Europe convinced me that oil and vinegar is the best way. Also a good dressing is Newman's Own Raspberry Walnut Vinaigrette.
I actually do the hummus as dressing thing too! Guess it's been a while though. Maybe tomorrow! :)
Sarah: Vitamuffins can be bought online, but a lot of stores carry them too. Usually in the freezer in the natural foods sections. I got mine as product review samples and so far I like the cranberry bran the best but most folks like the deep chocolate. :)

I do not like salad dressing so I use things like tuna, salmon, guacamole, salsa, olives, cheese, hot peppers, etc... I do not have these all at once. :)
Mmmm...hummus on salad. Yum. Question: are the beets cooked and then grated, or do you grate them raw into your salad? Inquiring minds want to know...

How funny... I just finished up a package of the TLC Pumpkin Pie bars and I didn't like them either! They are a little too sweet, not all that pumpkin-y, and they are SMALL for a 2-pt. bar.
I am faithful to Paul Newman. Well, his Light Balsamic Vinaigrette, anyway.
I like my salad really simple, so I just have some torn up romaine, and the "dressing" is a chopped up tomato. Then the whole thing gets sprinkled with salt and pepper. Plain, but I ♥ it!

I bought a box of the Raspberry Chocolate Kashi Fruit & Grain bars and I don't care for them either. They're edible, I'll finish the box, but I won't buy them again.
