Bad Mood Rising

Let me just say that today was a crap day.  It started out good, but went rapidly downhill this afternoon.

Today is one of those days where I wish I could rant about work…but alas I don’t talk about my job on the blog.  I love my job, but today things made me angry.  Nuf said.

Couple that with being way behind on a few things and having to work two hours late to make up some time and it makes for a cranky girl.

Add in that my back has decided to be a bitch so I can barely stand up straight and today lands in the suck-it category.

Booooooooooooooooooooooooooooooooooooooooooooooooooooo!

At least there was food.

Lunch was prepped for eating during the weekly conference call.  A bowl of Cauliflower & Garlic Soup.  As predicted this was awesome after sitting overnight…

And a green smoothie to sip quietly while listening to the call…

Super basic: ice, 1/2 banana, spinach, UVAB  (skipped the flax because I had that in my oats this morning)

And dessert. Coconut Liberte with Craisins and granola…

This afternoon I got a bit more strength training while helping FH with a pile of snow the plow left us.  Blech.  We are dreading the arrival of the sidewalk plow guy…he always makes a ton of noise and leaves a giant mess in the driveway. Usually at 3am.  Bugger.

Even though I was angry at work, that was no reason to abandon my responsibilities so I kept chugging along until around 7pm.  At that point I was getting really hungry so I had to call it quits. 

Admittedly junk food seemed appealing due to my bad mood, but I resisted and made some homemade comfort food instead. 

Coconut crusted chicken fingers and sweet potato moons.

For the fingers

  • 3 bowls: 1 with seasoned flour, 1 with breadcrumbs & coconut, 1 with egg whites
  • slice a boneless skinless chicken breast into strips
  • dredge in flour mixture, shake of excess
  • dip in egg whites
  • dredge in coconut mixture
  • place on sprayed baking sheet and bake at 425 for about 25 minutes, flipping at 15 minute mark

Dipped in Liberte Greek yogurt and honey dijon.

With mixed greens drizzled with Fig Balsamic

Now I’m thinking about trying some more stretching to get my back to loosen up.  I really wanna go to the gym in the morning!  This bad mood needs to be beaten off with sweat!

Aw, I'm sorry you had a bad day. Sounds like me yesterday. And I did not talk about my job yesterday either. Today I was much better. *hugs* I bet those cookies made it all better.

I wish I could eat coconut because I love it. But it makes me swell and it's not fun.
