The liquid lunch barely held me through until dinner. After my chiropractor appointment I was nearly gnawing my arm off, and since I still had work to do I decided to just eat a couple of clementines to tide me over.
Thankfully the dinner I had planned came together very quickly. I never think to make couscous, but thanks to Food Network I grabbed a box the last time I bought groceries.
The first episode of 5 Ingredient Fix I watched had a couscous recipe I wanted to try. I modified based on the ingredients I had on hand.
- Boiled 2 cups veggie stock.
- With a few chopped dried apricots and a handful of dried cranberries.
- Pour over 1 1/3 cups of couscous, stir, cover with plastic wrap and let sit 5 minutes.
- When ready to serve, sprinkle with green onions, a big squeeze of lemon and fresh ground pepper. Fluff with a fork and stir.
While the couscous was sitting I cooked up some shrimp.
EVOO, garlic, s&p, lemon.
And stirred in last night’s leftover roasted asparagus.
Served all together. Deeeeeelish.
There’s a whole lotta couscous there…it’ll will be making repeat appearances for sure.
And you know an evening around here isn’t complete without tea and dessert. Since I am low on treats I had to bake something up!
You’ll have to wait til tomorrow to find out what it is. bwahahhaa.
Time to do some puttering around. FH is home tomorrow night!!! weeeeeha!

How do you come up with these creations??? I really need to start experimenting! It's been so long since I've had extra money for groceries though... it will probably be "just the basics" through the holidays... but keep posting your pics! They give me all sorts of ideas!!!
So strange, but I was just thinking last night how I haven't had couscous in a while and that I wanted to make some! lol

That looks like a wonderful meal! I always forget about adding dried fruit to savoury dishes, but they can make it taste sooo much better :)
I think I've made almost that exact couscous but I almost can't have couscous without adding cumin. If you made that sustituting a little orange juice for part of the broth and added a little cumin and chick peas, you'd have a nice light healthy lunch.
