Holy Nova Scotia rain storm last night people! Perfect night to hunker down with a cozy dinner, some baking, and a Canucks game (which I watched with Cat even though we’re a country apart!).
I had thawed some some pork loin chops for dinner but I wasn’t really feeling the love for them…what I really wanted was stir-fry…so that’s what I had!
Found this packet of stir-fry seasoning in the cupboard…I used it because it was easy but in the future I’ll make my own sauce like I usually do. I woke up this morning with a sodium headache! It was tasty though.
Simply cooked up sliced pork loin in a smidge of veggie oil, then cooked up veggies in the same pan. Onions, carrots, broccoli and mushrooms.
Then add the meat back to the pan, add the sauce (seasoning and water, that’s it) and let simmer til thickened.
Added bean sprouts at the end. Locally grown! Who knew? And did you know that what we always just call bean sprouts are actually mung bean sprouts? I didn’t. Now I do!
Served without a carby base. Who needs rice? This way I can have two servings and not be counting starchy calories. :)
While I was cooking another evil pb pumpkin tried to infect the broccoli. Don’t worry, I took care of him.
While watching (listening!) the Canucks kick the Leafs asses I did some baking…

Wow that Stir-fry looks soooo good. And your right about the rice, definitly not needed when you have enough of the good stuff.
Me--I need rice! And I hate bean sprouts more than anything else in the world. But other than that, that stir-fry looks pretty good! Just the seasoning and water, huh? That appeals to my "I want easy food" side.
Fudge is bad! Bad I tell you! It seduces me and makes me eat the whole entire package in one day.
I think we should have a standing date for all the early games.... I'll let you know when the next one is coming up...
