Pumpkin Spice and Everything Nice

Whooops.  Guess I’m a little late!  Nothing exciting to report on this morning…well, other than Pumpkin Oats!  :)

In the pot:  water, unsweetened vanilla Almond Breeze, whole oats, 1/4 banana, 1/4 cup canned pumpkin, cinnamon, pinch of brown sugar, flax meal.

On top: 1/4 banana, toasted pecans, smooth organic peanut butter

Heaven in a bowl!  Deeeeeeelish.

With coffee in a pumpkin mug of course…

Speaking of pumpkin spice and everything nice…I know you’ve all been shooting darts at me with your eyes just waiting for the Pumpkin Spice Fudge recipe.

Well I tell ya…I got it online!  After Googling around a bit, I found that a lot of the recipes out there were pretty much takes on the exact same recipe.  So I decided to use this one from RecipeZaar. (I left out the nuts).

I’ve never made fudge/candy before so I was a little worried this first time wouldn’t turn out.  But happily it was actually pretty easy!!  And it turned out fab.  The purchase of this candy thermometer saved the day…less than $10 at SuperStore.

The best part was buying marshmallow fluff for the first time in years!  Fun.  OK, the best part was actually licking out the jar later.  :)

I’d say the pumpkin pie fudge I bought in Mahone Bay was better (more pumpkiny, less sugary) but this is on par (if not an exact duplicate) of the pumpkin spice fudge a few of us picked up at Pete’s Frootique during the Halifax GTG.

Totally worth making.  It’s a keeper! I now have a fridge full of treat bags for Halloween gifties for neighbors and friends.  It makes a 9 x 13 pan, which I consider to be A LOT of fudge!

Hintas soon as it firms up and you can cut it, do so.  I cut it into 12 squares and portioned them each into Ziplock baggies in the fridge.  This way I won’t dip into them because they aren’t in plain view.  :)

When I was a kid it was somewhat of a family tradition that my Dad would make fudge - without a candy thermometer. I remember trying it a few times on my own and it was always a crap shoot as to whether it would turn out. Definitely easier with a candy thermometer!

And here I was wondering what I could give to one of the girls at work as a gratitude gift this week. This fudge will be perfect! I'll get to eat a little but I won't have to have it in my house (which would be awfully dangerous!) and she'll get something truly unique and delicious. Win/Win!

Mmmm pumpkin fudge. Yummmm. I love anything that has pumpkin in it. I don't know how you have the will power to not eat the whole pan.

Jamie your meals are seriously inspiring....seriously. I have a new goal: For my meals to look half as good as yours.

Oh and I really can't help laughing out lous when I see one of those evil pumpkins trying to take over. So cute!

I had tried a recipe with pumpkin in it that ended up hard as a rock so I'm thinking I need to invest in a candy thermometer. (it also looked way darker than the pumpkin fudge I've bought) I also tried a recipe where the white chipits were overpowering - too much white chocolate flavour, not nearly enough vanilla.

Must try this one! :)
