Holy crazy day! I haven’t left my desk for more than a pee or a quick meal all day! Between work and the email craziness that has taken hold of planning for a Canadian Blogger Girls GTG I am afraid to leave my keyboard for fear of missing something!
Good thing I’ve fuelled my day with lots of “brain food”!
My new favorite oatmeal love. Applesauce Oats!
I was out of bananas (fresh and frozen!) but wanted oatmeal pretty bad so got to thinking of other options. Autumn flavors were on my mind and so…apples and cinnamon was an easy choice.
In the pot: 1/3 cup unsweetened vanilla Almond Breeze, 1/3 cup water, 1/3 cup oats, 1 heaping huge tbsp flax meal, giant shake of cinnamon, 1 Motts unsweetened apple sauce cup (added when the oats were about halfway cooked)
Toppers: heaping tbsp raisins, crumble of brown sugar, about 1 tbsp apple sauce I saved from the cooking process
I’m in LOVE. *drool*
This along with my coffee held me over all morning and into the afternoon. Then it was time for salad! Bacon & Egg Spinach Salad to be specific.
I wanted leafy greens for lunch because I know that chili and cornbread on on the menu for tonight. Gotta balance out that carby goodness with some veggie love.
Into my bigass salad bowl: mixed baby spinach & arugula, orange pepper, red onion, and tomatoes
Then mixed in chickpeas and a big drizzle of Renee’s Spring Herb dressing.
Topped with freshly boiled egg (still warm!) and crispy bacon (I crumbled this in after I took the pic).
Deeeeeeeelish people. Seriously. Bacon makes everything better.
Big Friday night plans over here include hitting the gym, making chili and cornbread, and household chores. Yes, it’s a party a minute around here! But I do have a couple of busy days coming up and sometimes you just gotta find time to clean the toilets when you can. ;)

I didn't actually realize HOW MANY emails there was until I got home and opened my Mac email and there was 196 EMAILS from today!!!! lol

HAHA!!!! I went to lunch and came back to like 50 emails!!! I was like holy crap!!!!
It's less than 70 hours for me now!!!
