Yesterday was a fairly busy day so I’m going to have to break it down into a couple of posts. I’ll do the food business first to get it out of the way. :)
I wanted to take Mom to the Annapolis Valley for the day because Fall is quickly approaching and I thought the farmland would be particularly pretty this time of year. We aimed for Wolfville with the idea of just milling around, checking out the Look-off, going to The Port Pub, and hoping for time at a few markets.
For breakfast I cut up a couple of peaches, topped them with vanilla yogurt, a few pecans and craisins, and a sprinkle of hulled hemp seed.
On the way out of town we stopped for Starbucks…it was time for another Triple Grande 1/2 Sweet Non-Fat Pumpkin Spice Latte. The girl was new and didn’t have a clue how to repeat my drink name back to me, so I was worried it wouldn’t be good…but it was. Yum!
A Kashi bar in the car.
Another late lunch for Mom and me. We did indeed head to The Port Pub because I could hear the lobster clubhouse calling my name. :) Third time there, third time ordering the same thing. At least this time Mom and I decided to share our meals…so I had half the sammich with some salad and half of an order of fish n chips. The fish was excellent. Better than the sammich actually.
The pub also has a fun selection of house made beverages…not just their beer, but sodas and teas as well. I ordered their fresh brewed ice tea with pomegranate/cranberry simple syrup. The tea is unsweetened so they bring the homemade syrup on the side so you can sweeten to taste. So good!
After the tons of driving and the big lunch we made our way into Wolfville, parked and walked around a bit. The first thing I saw was the Just Us! cafe and knew I needed an iced coffee to carry while we wandered. :) Just a medium iced vanilla Americano with a big splash of skim milk.
When we got home late evening we weren’t really interested in dinner. I made a quick dish of leftover rice with some of the curried quark I picked up at Foxhill Cheese (review to come). I added a few raisins and diced apple to spiff it up, but it still needed something (chutney maybe?). It filled the tiny little meal hole in my tummy though.
I also needed to do something with the ripe peaches. Overnight they had gone past ripe to starting to rot…I hate that!!! So I had sliced up all that was still good before we left for the day and kept them refrigerated. I was thinking about something along the lines of a peach cinnamon roll or sticky bun, but when I started Googling recipes the first thing that came up was peach cobbler!
I didn’t really have all of the exact ingredients, but I did have a box of Bisquick so I managed to make that work. Added some sugar, cinnamon and unsweetened vanilla Almond Breeze to make the “dough”. Dobbed that on top of the sliced peaches mixed with a little sugar and cornstarch. Baked until the dough browned and the peaches bubbled.
Not my best work but certainly tasty enough. :)
Served it with Foxhill vanilla yogurt. I’ll be eating this for breakfast for a few days I think.
