No Excuses! (and a recipe treat!)

So week one of Mom’s visit is done and gone (man, time flies!) and I woke up this morning with a new resolve to remember that I’m not the one on vacation here!  There is no real reason that I haven’t been to the gym, or haven’t been making healthy choices…other than that I’m using Mom being here as an excuse.  Well, no more!  :) 

First thing this morning I broke open the meal & workout chart again...

Made a yummy breakfast of leftover peach cobbler with Foxhill vanilla yogurt…with coffee of course.

Then the return of the noon workout!  WooT!  20 minute treadmill run (it was tough people…but after the first 5 minutes I did OK).  Followed by many, many various squats and a quick mini-ab workout to get back into the swing of things.

For lunch I was a starvin’ marvin.  I had been thinking about what to do with that curried quark from Foxhill and was pretty sure it would make a good sandwich spread.  Yup!

A toasted PC BM multigrain flax bagel, schmeared with the quark and topped with lettuce, tomato, and red onion.  Lots of salt & pepper to finish it off.

Some organic green grapes on the side.  (Let me just say…these started to go bad really fast!!)

And then a little piece of Weight Watchers recipe nostalgia.  It’s been forever since I made a batch of ChocoBrans.  Like over a year, closer to two maybe.  Last week I picked up a box of Betty Crocker brownie mix and knew exactly what to do with it…and yesterday I whipped up a batch.  

Dense, chocolately, fiberific heaven.

The recipe couldn’t be easier:

- 3 cups All-Bran Original cereal

- 2.5 cups boiling water

- 2 tsp baking powder

- 1 package Betty Crocker Low-Fat Brownie Mix

- 4 tsp good cocoa

Preheat oven to 375 degrees.

Combine All-Bran and boiling water.  Cereal should become soupy mush.

Stir in baking powder, then cocoa.

Fold in brownie mix, half at a time.

Scoop into sprayed muffin tins (makes 18).

Bake for approx 12 minutes, until muffin tops are cracked and toothpick comes out clean.

These keep well in the fridge…keep them properly wrapped.  Deeeelish.

Dusted with powdered sugar just for fun.  :)

I realized afterwards that I was supposed to make 18 and only made 12, which is why they are soooo huge this time!  oooops.  So much for 2 points per treat.  LOL.

Ah yes the ol' chocobrans! I bet they would taste different to me now than they did back when we thought they were all the rage! I have been noticing that my tastes have seriously changed significantly in the last 6 months! I'd love to try one to see.

Did you read that incredible article not too long ago inthe Globe & Mail about Canada and our sodium content?It was nuts...like our All Bran has way more sodium than US and other versions around world?!
And the list went on ...products,fast food,etc etc even things I thought healthy!
What a horrible thing for the Canadian public.Knowing too much sodium can lead to high blood pressure,stroke etc we better all rise up and protest this.It's so BAD for us!!!!!

Here is Globe and Mail article link(All Bran mentioned in first sentence or so...wait to you hear how much more sodium here than US in same product!
Something like 650 mg here compared to 160 in US!!!!!

mmm chocobrans - haven't seen those in a while! i think if you make 24 they are only 1 point each. I usually make 12 at a time by using 1/2 the brownie mix.
