Little Thai Friday

More hilarious condo hijinks continue.  The tale of the unknown dripping noises in my bathroom has finally be solved.  But not before dragging me out of bed an hour early and then having no one show up!

Obviously I was so sleeeeepy I was hugging my coffee cup, whining on Twitter, and completely forgot to pick up my camera.  But trust me, I had coffeeeeee.

After discerning that no one was showing up, I made breakfast.

Oatmeal of champions:  oats, water, UVAB, flax, chia, and banana…topped with hemp seeds and natural peanut butter.

After a quick call to our management company, the plumbing folks apologized for the mess up and sent a (ahem, super cute) plumber my way.  He figured out right away that the leak was definitely coming from the unit upstairs…but alas I was the one that had to have the bigass hole cut in my ceiling.

Leaky pipe directly under the upstairs tub.  Good news is it’s a building issue so strata pays for everything.  Thankfully I haven’t reno’d my bathroom yet!  Now I just wait for them to patch the hole!

While he worked I made lunch.  Super duper deeeelish scramble!

Two eggs, black beans, orange peppers, green onions, salsa, cream cheese and a sprinkle of Tex Mex cheese.  OMG.  Creamy and filling.

Served up with toasted sprouted grain bread with a schmear more cream cheeeeese.

Once the cutie patootie had solved the leaky issues and packed up, I decided to head out for a hot drink.  I’d been cooped up all day and was actually freezing from having all of the windows open while he ran his torch.

Chilly weather switch up!  Vanilla Rooibos Tea Latte.

What’s wrong with this picture?  mhmmmm….totally missing the NON FAT part.  Dear Starbucks, this is the third drink you’ve mussed up in two weeks.  Booooo.

My late Thursday night caught up with me after work and even though I had plans and ingredients to make a really cool homemade pizza I just couldn’t bring myself to stand in the kitchen and cook.  The thought of Thai food flitted through my head and I just couldn’t ignore it.

I called in a pick-up order to Little Thai Place and 20 minutes later I had a delicious bag of food all for me!

Yummy spring rolls.  I love the sweet dipping sauce…isn’t it always about the sauce?  There are two leftover in the fridge that may not make it through the lunch hour.

Speaking of sauce…the main reason for this meal was the Red Curry!  So deeeelish.  Little Thai Place fills theirs chock full of bamboo, Asian eggplant, red peppers, basil and I chose chicken as my protein.  Served over perfectly moist and sticky rice…I had two HUGE helpings!

It has been years since I tried any other Thai restaurant in Victoria.  This red curry never disappoints so why be different?! :)

After dinner I tucked into the couch with my Snuggie, my kitty, SATC2, and a mitfull or two of Swedish Berries.  The punishment for flitting around town on weeknights is a quiet Friday night in.  I was in bed by midnight, kicked insomnia to the curb, and slept fabulously.

Burnt Nuts

What do you get when you make breakfast before coffee?

Burnt Nuts!

While toasting the walnuts for take two of the coconut yogurt, banana, date, walnut dish I totally got side-tracked and came back to find my nuts were extra toasty.  Whooooops.  They were salvageable though so into the bowl they went!

Just shortly after Skype messaging with my friend Michelle about packages we sent each other the postman buzzed.  His ears must have been burning because he showed up with her package!

Michelle was one of the friends I was supposed to visit Vegas with last month when I had to cancel because of my bum pain. She also collects Starbucks city mugs and had brought me this one from San Jose…so she sent it along via post instead.

The collection is growing so fast!!

Lunch was a quick fix made up mostly of items from the fruit bowl that needed to be eaten.  Tomato & cheeeesey toast with a side of Asian Pear.

Afternoon sugar buzz…

So here is a questionYam or Sweet Potato?

I have always referred to the pinkish orange one as the Sweet Potato, and the yellowish ones as Yams.  I’m 99% sure that is what I was taught as a grocery cashier a lifetime ago.

In Halifax I never really saw the so-called yams around and always bought sweet potatoes…but they were often labelled as yams in the store.  My friend Sarah and I haggled about this differentiation more than once.

Last week I bought these babies and they were labelled the opposite of my beliefs.  They say the pinkish orange ones are yams.  I disagree.

What do you say?

Either way I still call these Sweet Potato Chips…

Sliced thin, tossed with a smidge of olive oil and sprinkled with coarse salt.  Thanks to Martha Stewart I knew to cook these at 400 degrees for about 20ish minutes, flipping half way.

Spent another night out on the town for beers with a friend.  These social weeknights are taking their toll on this gal.  I’m pooped!

Family Jules

Yesterday seemed to be a mad dash all day long.  Well as much of a mad dash as can be with a bad hip. :)

Typical of all Wednesdays my day started out with a conference call.  Instead of trying to sneak off my headset for a second cup of coffee I just poured the whole Bodum-full into my Ireland mug.

After the call it was time for breakfast. I headed into the kitchen to make oatmeal but when I opened the fridge I spotted the Liberte Coconut Yogurt and couldn’t resist.  Then I saw the big container of fresh dates on the counter.  We have a match!

Coconut, chopped fresh date, sliced banana and warm toasted walnuts.

Pretty decent staying power too.  It was ages before I thought about lunch.  After a while I thought I should probably eat even if just to make sure I’d digested before heading to my afternoon massage appointment.

Enchilada fixings make excellent salads!  In the big silver bowl: fresh spinach, black beans, tomatoes, orange peppers, shredded chicken breast, shredded cheese, salsa and sour cream.

After hustling to get as much work done as possible, I headed off to see my friend Laura for a massage.  When I have seen her in the past she really understood the issues I’m having with my back and nerve pain so I knew she would be able to work around it without messing up my physiotherapy progress.

I just really needed my shoulders and neck worked on…everything has been devoted to my stupid pain in the ass for so long my upper body has been neglected.  I’d been sporting a headache for like 5 days!

Laura fixed me up fabulously. :)

I had to race home from my appointment to finish work, make and eat dinner, plus shower and redo my hair and make-up to head out for cocktails.  I had about 2 hours to accomplish this all.  Thankfully dinner was supah easy…

While my hair started to air dry and I tackled my last 20 minutes of work, I reheated another enchilada and steamed up some broccoli.  (And took time to freeze the remaining enchiladas…three days in a row is my max!)

Admittedly this plate moved to the bathroom counter and I ate as I blow-dried.  Managed to eat about half before I had to race out the door.

Couldn’t possibly be late for cocktails you know! :)

Two drinky-poos out on the town, then back home and tucked into bed with a midnight bowl of Kashi cereal to calm my hungry tummy.  I can’t sleep when my stomach is reminding me I didn’t finish my dinner.

Who’s watching Cougar Town?  Have you noticed how each week they add to the title of the show poking fun at their own stupid show name?  Love it!
