These cookies are delish!
I got the recipe from Erin at Going Skinny.
Yummy Oatmeal Raisin Cookies
Mix together in a smallish bowl:
1 c. whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
In a larger bowl mix:
1 c. packed brown sugar
1/4 c. unsweetened applesauce
2 Tbsp canola oil
1 large egg
1 tsp vanilla.
Add dry to wet. Stir.
Then add in:
1 1/3 c. uncooked old fashioned oats
1 c. raisins
Preheat oven to 375 degrees F. Drop mixture by rounded teaspoons onto a non-stick cookie sheet. Use parchment paper if you have it. If not, give it a little spray. Leave a good amount of space between cookies, they spread quite a bit. Bake 8 minutes or until lightly browned. Allow to cool for 5 minutes before removing from cookie sheet.
Makes 40 cookies. Per cookie: 63 calories, 1g fat, 1g fibre
