Guest Post: Low-Fat Blueberry Muffins

Here is a low-cal muffin recipe that I love!

Low-Fat Blueberry Muffins

1 egg
1 c. skim milk
1 c. frozen blueberries
1/4 c. unsweetened applesauce
2 c. flour
1/4 c. sugar
1 t. vanilla
3 t. baking powder
1 t. salt

Optional:
bit of lemon zest
juice from one lemon wedge

Mix everything together and bake 20-25 minutes (until lightly browned) at 400 degrees Fahrenheit.

Makes 18 muffins, at 77 calories per muffin.

Or, a variation…

Low-Fat Chocolate Chip Raspberry Muffins

Substitute for the blueberries:

200 g frozen raspberries
30 g mini semi-sweet chocolate chips


This variation is 86 calories per muffin.
